Objectives

The GO-SMOKED project aims to address challenges in the industrial smoking process by developing an innovative modular system. This system will incorporate technological solutions to digitize and automate production while preserving the organoleptic characteristics of the product. Notable innovations include isolating the smoke generation area, optimizing the process using more sustainable raw materials, and implementing sensors and algorithms to monitor and control real-time parameters of process and product quality. The goal is to enhance the efficiency, safety, and sustainability of the Asturian sausage production process.

Objectives

El proyecto GO-AHUMADO busca abordar desafíos en el proceso de ahumado industrial mediante el desarrollo de un sistema modular innovador. Este sistema incluirá soluciones tecnológicas para digitalizar y automatizar la producción, preservando las características organolépticas del producto. Se destacan innovaciones como el aislamiento de la zona de generación de humo, la optimización del proceso mediante materias primas más sostenibles y la implementación de sensores y algoritmos para monitorizar y controlar en tiempo real parámetros de proceso y calidad del producto. El objetivo es mejorar la eficiencia, seguridad y sostenibilidad del proceso productivo de embutido asturiano.
