Activities
Use of sexed semen on better dairy cows so as to produce only female calves for internal replacement
Use of semen from selected beef bulls on other dairy cows, chosen on the basis of easy childbirth and good production characteristics (may be sexed or not)
Birth of one or more calves weaning pilot plants where it will be possible to test innovative breeding, feeding and prophylaxis techniques, and evaluate the results (qualitative, quantitative, economic)
Increase and valorisation of Tuscan meat through control of: production process, animal welfare, product quality and greater food safety

Kontext
In Italy there is a notable decrease in the production of beef which has led to a greater recourse to imports. In this context there is the need to increase the production of beef in Tuscany by referring to existing farms, even those specialized in the production of milk, using modern breeding techniques, also encouraging the breeding in Tuscany of calves that are currently transferred in Northern Italy, enhancing production through quality improvement and certification and achieving consolidation of the entire supply chain, including commercial aspects.
In implementation of measure 16.1 (first phase) ARAT conducted a fact-finding survey in a significant sample of dairy cowsheds in the provinces of Florence, Grosseto, Livorno, Lucca, Pisa and Siena which involved n. 36 farms in order to highlight above all the type of calves produced (in purity, mestizo, males, females) and their destination, to verify if in Tuscany there is the potential to produce a greater number of meat calves, obtained from dairy cows .
The survey confirms the initial hypothesis proposed by the partners: that of having available a large number of cows to be fertilized with meat bulls seed to obtain mumps that can be weaned and fattened in Tuscany and marketed under the Toscana-Toscana brand, in order to enhance a product, although secondary to milk, but still necessary for the production of the same. In the only stalls surveyed could be recovered over 1150 calves that today are born of pure breed and that are worth very little for the meat market.

1 Practice Abstracts
The project tested the weaning methods of 23 Italian Friesian x Belgian Blue (IFxBB) and Italian Brown x Belgian Blu (IB x BB) crossbred calves, the fattening techniques, the slaughter yield and the appreciation of consumers. The zootechnical and economical aspects as well as the repeatability of the project in other Tuscan farms were also evaluated.
The two partner farms were provided with female sexed semen of the two dairy breeds IF and IB for the production of the heifers’ replacement as well as of BB sexed semen for the crossbred calves production. 150 doses of BB female sexed semen were distributed to several dairy farms in Tuscany. At the same time, the Classyfarm system for the assessment of animal welfare and biosecurity was introduced, both in the farms of the partnership and in other farms.
To disseminate the production model to other breeders training courses and conferences were held and leaflets, brochures and the website www.vitosca.it were produced. A widespread information and dissemination action was also carried out by the technicians of the Regional Breeders Association of Tuscany who are in livestock farms.
The results of the project are satisfactory and the methods tested have already been largely transferred to the livestock sector in the region. There are many dairy farms using BB semen to obtain crossbred beef calves, some fatteners have also begun to carry out the weaning activity filling a gap present a few months ago, butchers and consumers appreciate the meat produced by this supply chain, with evident economic return. Attention has also spread to well-being and biosecurity, with increasing use of the Classyfarm evaluation.
Si sono verificate le modalità di svezzamento di 23 vitelli meticci Frisona Italiana x Blu Belga (FIxBB) e Bruna Italiana x Blu Belga (BI x BB) negli allevamenti di nascita, le tecniche di ingrasso, la resa alla macellazione e l’apprezzamento dei consumatori. Sono stati inoltre valutati gli aspetti di carattere zootecnico ed economico e la ripetibilità del progetto in altri allevamenti toscani.
Ai due allevamenti partner è stato fornito materiale seminale sessato femmina delle due razze da latte FI e BI per la produzione della rimonta e di razza BB per la produzione dei meticci. 150 dosi di seme sessato femmina BB è stato distribuito a diversi allevamenti da latte in Toscana. Parallelamente si è introdotto il sistema Classyfarm per la valutazione del benessere animale e della biosicurezza, sia nelle aziende del partenariato, sia in altri allevamenti.
Per divulgare il modello produttivo sono stati realizzati corsi di aggiornamento e convegni, sono stati pubblicati opuscoli, brochure e il sito web www.vitosca.it. Una capillare informazione e divulgazione è stata svolta dai tecnici dell’Associazione Regionale Allevatori della Toscana presenti nelle aziende.
I risultati del progetto sono soddisfacenti e le modalità sperimentate sono state già largamente trasferite nel tessuto zootecnico della regione. Molte sono le stalle da latte che utilizzano il seme BB per ottenere vitelli meticci da carne, alcuni ingrassatori hanno iniziato a svolgere anche l’attività di svezzamento colmando un vuoto presente fino a pochi mesi fa, macellai e consumatori apprezzano le carni prodotte da questa filiera, con evidente ritorno economico. Si è inoltre diffusa l’attenzione al benessere e alla biosicurezza con crescente ricorso alla valutazione Classyfarm.
