It is estimated that slaughterhouses in Spain generate 5.1 M tonnes of by-products per year, of which 200 M kg is blood. This by-product is of particular concern from an environmental point of view, given the high volumes generated, its pollutant load and complex composition, which make it difficult to manage. Nowadays, despite its high potential for obtaining high added value products, it is mostly managed as SANDACH waste. Although this involves a significant administrative and legal burden and an associated cost, it is the only economically viable alternative for most companies. On the one hand, having an on-site protein recovery system, taking into account the alternatives currently available, involves a minimum estimated cost of around €5m, which implies a very high price that the vast majority of companies in the sector cannot afford. An alternative could be centralised treatment systems, however, they also involve a significant investment at industrial level, in terms of the environmental impact of the activity (on-site activity does not generate new environmental impacts), which limits their development. In addition, they also have a significant environmental impact due to the carbon footprint of waste transport. Currently, only large slaughterhouses located in Catalonia and in the Mediterranean Arc manage blood in this way, which represents around a 30 % of the total. The meat sector needs to focus on exploiting the opportunities presented by slaughterhouse blood and rely on science and technology to develop low-cost management alternatives that can be adopted by companies and move it from being an undesirable waste to a valuable resource.

2 Practice Abstracts
A)Valorización de sangre bovina/porcina para la obtención de bioestimulantes para fertilización. Indicadores: (1) 500 L a partir de sangre bovina; (2) 1L a partir de sangre porcina; (3) validación a TRL 6-7 de los de sangre bovina en al menos 3 cultivos; (4) comparación (laboratorio) entre bioestimulantes de sangre bovina y porcina considerando productividad de los cultivos y coste/beneficio.
B)Ingredientes funcionales con alto contenido proteico a partir de sangre porcina para ser utilizados en la formulación de complementos alimenticios o en productos cárnicos. Indicadores: (1) 4 kg de ingredientes funcionales procedentes de sangre de cerdo para uso en complementos alimenticios; (2) 1 kg de ingredientes funcionales procedentes de sangre de cerdo; (3) validación a TRL 6-7 de los ingredientes proteicos para ser utilizados en la fabricación de al menos 1 tipo de complemento. Validación a TRL 5-6 del uso de ingredientes funcionales directamente en productos cárnicos dentro de la industria cárnica. C)Información sobre la viabilidad técnico-económica, sostenibilidad ambiental y aceptabilidad social de los productos obtenidos. Indicador: (1) 3 informes.
A)Valorisation of bovine and porcine blood to obtain biostimulants for fertilisation. Indicators: (1) 500 L of biostimulants from cattle blood; (2) 1L of biostimulants from pig blood; (3) validation at TRL 6-7 of the biostimulants from cattle blood in at least 3 types of crops; (4) comparison at laboratory scale between biostimulants derived from bovine and porcine blood considering at least crop productivity and cost/benefit.
B)Functional ingredients with high protein content from pig blood to be used in the formulation of food supplements or directly in meat products. Indicators: (1) 4 kg of functional ingredients from pig blood to be used in food supplements; (2) 1 kg of functional ingredients from pig blood; (3) validation to TRL 6-7 of the protein ingredients to be used in the manufacture of at least 1 type of food supplement. Validation to TRL 5-6 of the use of functional ingredients directly in meat products in the framework of a circular economy model within the meat industry itself.
C)Information on the technical-economic feasibility, environmental sustainability and social acceptability of the products obtained. Indicator: (1) 3 report .
The main objective is to offer a technically viable and sustainable alternative for the management of blood generated in slaughterhouses by obtaining added value products. Specific objectives: (1) to recover waste bovine/porcine blood origin as a biostimulant and validate its use in agriculture; (2) to recover waste porcine blood as an ingredient with high protein content and validate its use in tfunctional foods and meat products for human consumption; and (3) to determine the viability and degree of social acceptance of the biostimulants and functional ingredients.
El principal objetivo es ofrecer una alternativa técnicamente viable y sostenible para la gestión de la sangre generada en los mataderos mediante la obtención de productos de valor añadido. Objetivos específicos: (1) valorizar residuos de sangre de origen bovino/porcino como bioestimulante y validar su uso en agricultura; (2) recuperar sangre porcina residual como ingrediente con alto contenido proteico y validar su uso en alimentos funcionales y productos cárnicos para consumo humano; y (3) determinar la viabilidad y el grado de aceptación social de los bioestimulantes e ingredientes funcionales.
