Objectives

The objectives established in the project are assessing the productive potential of the perennial cereal (Kernza®) in the Catalan environmental conditions and the quality of the grain for producing flour for human consumption.
The aim is also to assess the Kernza® root system exploration capacity in order to estimate its environmental potential, both in terms of carbon assimilation and potentially contributing to reducing nitrate leaching into groundwater.
The final objective is to assess the quality of the flour and its inclusion in different agri-food products.

Objectives

Los objetivos establecidos en el proyecto son evaluar el potencial productivo del cereal perenne (Kernza®) en las condiciones medioambientales del territorio catalán, así como la calidad del grano para la producción de harinas para el consumo humano.
Del mismo modo, se pretende evaluar la capacidad de exploración del sistema radicular del Kernza® para estimar su potencial medioambiental, tanto en la fijación de C, como en su posible contribución en la reducción de lixiviación de nitratos a aguas freáticas.
El último objetivo consiste en evaluar la calidad de la harina y la incorporación de la misma en diferentes productos agroalimentarios.

Activities

• Agronomic block: Activities to study crop management were conducted. Specifically, all variables related to the crop were studied over two growing seasons and compared with the usual annual wheat.

• Flour production and analysis block: Different commonly used flour technologies were studied and the optimal processes selected.

• New product development block: Baking tests were carried out to determine the potential for developing new products using the Kernza flour obtained in the previous blocks, then possible alterations to the products caused by the new flour, its organoleptic characteristics and the commercial viability of the new products were studied.

Activities

• Bloque agronómico. Se han desarrollado las actividades referentes al estudio del manejo del cultivo.

• Bloque de obtención de la harina y análisis. Se han estudiado las diferentes tecnologías harineras utilizadas habitualmente, y se ha seleccionado los procedimientos más óptimos.

• Bloque de desarrollo de nuevos productos: Se han realizado pruebas de panificación para determinar el potencial de desarrollo de nuevos productos mediante la harina Kernza obtenida en los bloques anteriores y se ha estudiado las posibles alteraciones en los productos debido a la presencia de la nueva harina, sus características organolépticas, así como la viabilidad comercial de los productos desarrollados.

Kontext

Perennial crops have been shown to provide an overall increase in several key ecosystem services compared to annual crops. Kernza® (Thinopyrum intermedium) is a perennial grain crop developed by The Land Institute (Kansas, USA). Kernza® can be used for both fodder and grain in the same year. In fact, double cropping (fodder and grain) can increase yields compared to a single harvest (grain), with the same root growth. Kernza® yields can be up to 33% of wheat yields. Indeed, clones selected for grain have produced yields of up to 2,160 kg of grain/ha-1 in small field experiments. Although current yields are modest, the services in ecosystems associated with this developing crop are promising and a compelling reason to continue efforts to obtain higher yields. Kernza® is a very promising crop given its characteristics, such as the ability to combat weeds, assimilate carbon (C) and reduce leaching and run-off. 
The aim of this project is to produce new local flours from a new cereal (Kernza®), which is more sustainable and environmentally friendly, and also to develop new products for human consumption from this flour. It also assessed the plant’s suitability for fodder for animals. It is important to note that Kernza® is a relatively new crop, whose management, fertilisation patterns and productivity are unknown. The present project helps establish all these parameters and create a farming guide for the new cereal optimised for the Catalan environment. Finally, it also provided to data to establish a new industrial process for obtaining flour from a grain that is substantially smaller than the usual wheat grain.
