Objectives

The problems to be solved with the FITOCHE project concern: 1) the  reduction  of  fodder  essences,  traditionally  present  in
mountain  pasture  meadows,  as  well  as  the  abandonment  of mowing  and  grazing  with  the  progress  of  the  forest; 2) the land degradation risk; 3) the risk of compromising over time the  "common  consumer  feeling"  that  recognizes  the  mountain
product a superior quality and  genuineness, as well as  a role of soil  protection.

Objectives

I problemi da risolvere sono la mancanza di specifici disciplinari di produzione al fine di tutelare e promuovere la produzione di latte crudo di montagna (che potrà avere anche altra valenza,come ad esempio di prodotto biologico) destinato alla produzione di prodotti caseari di eccellenza spesso poco conosciuti e documentati.La riduzione delle essenze foraggere,tradizionalmente presenti nei prati-pascoli di montagna, a causa delle moderne pratiche agronomiche.Il possibile degrado del pascolo.

2 Practice Abstracts

The results of the FITOCHE project can be listed as follows:
Document/text accompanied by photos and testimonies about the historical aspects and origins of the partner dairies.
Document on the roles and beneficial aspects of dairy products in human nutrition of various age groups.
Technical-nutritional data sheets (chemical composition and technical characteristics) of the various dairy products involved in the project.
Mapping and analysis of the degradation and conservation of the soil used for the fodder production destined to milk production in the alpine pastures of the partners/conferents of the 5 dairies involved in the project.
Analysis of the floristic composition of the meadows and pastures of the partners/conferents of the 5 dairies involved in the project.
Census of partners/conferents of the 5 dairies involved in the project with description of the agro-zootechnical activities adopted in the area of activity of the 5 partner dairies

I risultati del progetto FITOCHE:

The FITOCHE project addressed the following problems: 1) the reduction of fodder essences, traditionally present in mountain meadows and pastures, due to modern agronomic practices, as well as the abandonment of mowing and grazing with the consequent advancement of the forest; 2) the possible degradation of the pasture; 3) the risk of compromising over time the "common feeling of consumers" who recognize the mountain product as having a superior genuineness and quality; 4) the lack of specific production specifications in order to protect and promote the production of raw mountain milk (which may also have other value, such as organic product) intended for the production of excellent dairy products, sometimes little known and documented. The innovative solution adopted was to foster a synergistic process among the major dairy cooperatives in the Venetian Mountains, through a holistic approach with an in-depth study of the historical-cultural aspects of dairies, the adaptability of mountain livestock systems to the territory and their relationships with plant biodiversity. In addition, aspects of geographic and aromatic traceability of dairy products were analyzed, fostering the transfer of scientific knowledge, with the control and development of good breeding and production practices.

Il progetto FITOCHE ha affrontato i seguenti problemi: 1) la riduzione delle essenze foraggere, tradizionalmente presenti nei prati e pascoli di montagna, a causa delle moderne pratiche agronomiche, nonché l’abbandono dello sfalcio e del pascolamento con il conseguente avanzamento del bosco; 2) il possibile degrado del pascolo; 3) il rischio di compromettere nel tempo il “comune sentire dei consumatori” che riconoscono al prodotto di montagna una genuinità e una qualità superiori; 4) la mancanza di specifici disciplinari di produzione al fine di tutelare e promuovere la produzione di latte crudo di montagna (che potrà avere anche altra valenza, come ad esempio di prodotto biologico) destinato alla produzione di prodotti caseari di eccellenza, talvolta poco conosciuti e documentati. La soluzione innovativa adottata è stata quella di favorire un processo sinergico tra le maggiori cooperative del lattiero-caseario della Montagna Veneta, mediante un approccio olistico con l’approfondimento degli aspetti storico-culturali dei caseifici, l’adattabilità dei sistemi zootecnici montani al territorio e le loro relazioni con la biodiversità vegetale. Sono stati, inoltre, analizzati gli aspetti della tracciabilità geografica e aromatica dei prodotti caseari, favorendo il trasferimento delle conoscenze scientifiche, con il controllo e lo sviluppo di buone pratiche di allevamento e produzione.
