Objectives
Docamex is a software for capitalizing on and mobilizing the know-how and experience of cheesemakers in the sector, enhancing their terroir.
Context: increase in the number of processing operators authorized in AOP Camembert de Normandie (dynamic in farm production) with the emergence of a need for technological support; problems with recruiting and retaining employees in cheese workshops (dairy makers, artisans, farmers) with a risk of loss of know-how (turn over, generation renewal)

Docamex est un logiciel de capitalisation et de mobilisation du savoir-faire et de l’expérience fromagers en filière valorisant leur terroir.
Contexte : augmentation du nombre d’opérateurs transformateurs habilités en AOP Camembert de Normandie (dynamique en production fermière) avec l’émergence d’un besoin d’accompagnement technologique ; de problématique de recrutement et de fidélisation des salariés au sein des ateliers fromagers (laitiers, artisans, fermiers) avec un risque de perte de savoir-faire (turn over, renouvellement génération)

1 Practice Abstracts
Challenges :
Keep track of the production of traditional Normandy Camembert by listing the practices and describing the cheese-making know-how in order to:
- Train future generations of cheese makers
- Accompany new processing operators (farmers in particular)
- Level of turnover within companies and the renewal of generations
Acquire a technological decision support tool: recommendations/good practice guide, decision support when faced with a technological problem, etc.
A tool for ODG cheese operators, for new operators, for learners...
Enjeux :
Garder une trace des savoir-faire de la fabrication du Camembert de Normandie en recensant les pratiques et en décrivant le savoir-faire fromager afin de :
- Former les futures générations de fromagers
- Accompagner les nouveaux opérateurs transformateurs (fermiers notamment)
- Palier au turn-over au sein des entreprises et au renouvellement des générations
Se doter d’un outil d’aide à la décision technologique : recommandations/guide de bonnes pratiques, aide à la décision face à un problème technologique…
Un outil pour les opérateurs fromagers de l’ODG, pour les nouveaux opérateurs, pour les apprenants…
