Objectives
The aim is to investigate the qualities of secondary plant constituents (antinutritives) in legumes and to develop analytical methods. Stable measurement methods for the most important antinutritive substances are to be established and a classification system for legumes developed during the course of the project. The classification of indigenous legumes with regard to existing quality requirements of specialized authorities concerning antinutritive ingredients should show farmers the potential to supply legumes to the food industry in the future.
Objectives
Ziel ist, die Qualitäten hinsichtlich sekundärer Pflanzeninhaltsstoffe (Antinutritiva) in Leguminosen zu untersuchen und analytische Methoden zu entwickeln. Dabei sollen noch während der Projektlaufzeit stabile Messmethoden für die wichtigsten antinutritiven Inhaltsstoffe etabliert sowie ein Klassifizierungssystem für Leguminosen entwickel werden. Die Einordnung einheimischer Leguminosen hinsichtlich bestehender Qualitätsanforderungen von Fachbehörden bezüglich antinutritiver Inhaltsstoffe soll Landwirten das Potenzial zeigen, zukünftig Leguminosen in die Lebensmittelindustrie zu liefern.
Activities
To obtain standard substances, legume seeds are examined for their content of antinutritive substances and batches with particularly high levels are selected for further processing. Batches of legumes grown in Thuringia are to be examined and classified according to the planned utilization routes. Finally, a test of Thuringian legume products will show which qualities can be achieved and how the bitter substance contents can be classified in relation to the recommendations of associations.
Activities
Für die Gewinnung von Standardsubstanzen wird Leguminosensaatgut auf dessen Gehalt an antinutritiven Inhaltsstoffen hin untersucht und entsprechende Chargen mit besonders hohen Gehalten für eine weitere Prozessierung ausgewählt. In Thüringen angebaute Chargen an Leguminosen sollen untersucht und entsprechend den geplanten Verwertungswegen eingestuft und klassifiziert werden. Schlussendlich soll eine Prüfung von Thüringer Leguminosenerzeugnissen zeigen, welche Qualitäten erreicht werden können und wie die Gehalte an Bitterstoffen in Bezug auf die Empfehlung von Verbänden einzuordnen sind.
