Objectives
For several years the consumption of fruit and vegetables in large retailers has increased steadily, unlike other food products. There is also a growing interest in local products, especially those at risk of extinction. At the same time there is a constant decline in the fruit and vegetables farms in Emilia-Romagna. There is therefore a need to enhance local productions more. We was therefore decided to support local companies by creating a logistic and commercial network towards a channel dedicated to large retailers, using mainly the landraces.
Objectives
Da diversi anni il consumo di frutta e verdura nella grande distribuzione (GDO) ha un incremento costante, a differenza degli altri prodotti alimentari. Si registra, poi, un interesse crescente verso i prodotti del territorio, in particolare quelli a rischio di estinzione. Nel contempo si sta verificando un calo costante delle aziende ortofrutticole in Emilia-Romagna. C’è quindi la necessità di valorizzare maggiormente le produzioni locali. Si è cosi pensato di supportare le aziende locali creando una rete logistica e commerciale verso un canale dedicato nelle grande distribuzione, utilizzando prioritariamente le varietà autoctone e altre note per caratteristiche organolettiche di pregio.
Activities
Identification of farms that grow local varieties.
Organization of collection and marketing through the creation of a single platform as a reference for retail chains.
Panel test and laboratory analysis for quality control and definition of the varieties of higher quality.
Recovery and protection of varieties at risk of disappearance through conservation in collection fields and then distribute them to farmers after the necessary phytosanitary checks.
Set up the most appropriate packaging.

Organizzazione della raccolta e della commercializzazione attraverso la realizzazione di una piattaforma unica come riferimento per le GDO.
Panel test e analisi di laboratorio per il controllo della qualità e la definizione delle varietà di maggior pregio qualitativo.
Recupero e salvaguardia delle varietà a rischio di scomparsa attraverso la conservazione in campi collezione per poi distribuirle agli agricoltori dopo i necessari controlli fitosanitari.
Messa a punto del packaging più opportuno.

2 Practice Abstracts
Main results are the following: 1. Created an ad hoc package where the purpose of the initiative, the type of fruit and the variety denomination were evident; cardboard chosen as the material, avoiding the use of non-recyclable plastic materials. 2. Made a specification to define the ways in which to carry out the various phases, from harvesting to processing, storage, transport and logistics, including the arrangement and management of packages on supermarket shelves. 3. The sensory tests carried out have highlighted some interesting aspects for the old varieties: the taster finds them more fragrant, with a more intense aroma and therefore, ultimately, very pleasant to the taste and smell. Laboratory analyses have shown that the fruits of these old varieties contain substances with nutraceutical action in much higher quantities than the new cultivars.
The results obtained are all aimed at enhancing certain fruit products typical of the regional territory, such as fruit obtained from ancient local varieties, trying to solve some logistical problems deriving from the considerable pulverization of the offer that characterizes them.
1. Creata una confezione ad hoc dove fosse ben evidente lo scopo dell’iniziativa, la tipologia di frutto e la denominazione varietale. Come materiale è stato scelto il cartone, evitando l’uso di materiale plastici non riciclabili.
2. Realizzato un disciplinare per definire le modalità con cui effettuare le varie fasi, dalla raccolta alla lavorazione, conservazione, trasposto e logistica, compreso la disposizione e gestione delle confezioni negli scaffali dei supermercati.
3. I test sensoriali svolti hanno evidenziato per le vecchie varietà alcuni aspetti interessanti: il degustatore le trova più profumate, con aroma più intenso e quindi, in definitiva, molto gradevoli al gusto e all’olfatto. Le analisi di laboratorio hanno evidenziato che i frutti di queste vecchie varietà contengono sostanze ad azione nutraceutica in quantità molto più elevata rispetto alle nuove cultivar.
I risultati ottenuti sono tutti volti a valorizzare determinati prodotti frutticoli tipici del territorio regionale, come la frutta ottenuta con antiche varietà locali, cercando di risolvere alcuni problemi logistici derivanti dalla notevole polverizzazione dell'offerta che li caratterizza.
Emilia Romagna has got very rich fruit germplasm, because fruit cultivation has very old tradition, not sufficiently known for quality traits. The aim of this project is to help farmers to sell old products, organizing commercial networks, until retails shelf. Packaging will be developed with many teller information for consumers.
Bio-degradable materials will be studied as possible substitutes to plastic packaging. Some old local varieties have been reintroduced by recent regional projects and now maybe trees are starting bearing. Others are already cultivated but in very limited numbers of trees. This project should create new commercial opportunities encouraging farmers to plant new trees. Diseases susceptibility will be also investigated to understand the possibility to use organic agriculture. Research has already shown that many old varieties are more resistant to disease than new ones. Biodiversity orchard, where many old genotypes are cultivated together, is an additional defense against pathogens.
Thanks to this project, the consumer will have the opportunity to find in the stores GDO local varieties of high quality characteristics that are difficult to find today, having precise information on the exact denomination, history, origin, production areas, methods of cultivation and nutritional aspects.
L'Emilia Romagna è molto ricca di germoplasma frutticolo poiché ha una antica tradizione nella coltivazione di specie da frutto, non sufficientemente conosciute per gli aspetti qualitativi.
Scopo di questo progetto è di supportare le aziende cercando di creare una rete logistica e commerciale verso un canale dedicato alla GDO utilizzando le varietà autoctone e altre note per caratteristiche organolettiche di pregio. Alcune vecchie varietà sono state reintrodotte nell’ambito di recenti progetti regionali e ora gli alberi stanno per entrare in produzione, mentre altre sono già coltivate in numero limitato di piante. Questo progetto dovrebbe creare nuove opportunità commerciali incoraggiando gli agricoltori a piantare nuovi alberi.
Sarà studiata anche la loro suscettibilità alle principali malattie, per verificare la possibilità di utilizzarle in agricoltura biologica. La ricerca ha già dimostrato che molte vecchie varietà sono più resistenti delle nuove.
Grazie a questo progetto, il consumatore avrà la possibilità di trovare nei punti vendita delle GDO varietà locali di elevate caratteristiche qualitative oggi difficilmente reperibili, avendo informazioni precise sull’esatta denominazione, sulla storia, l’origine, le zone di produzione, le modalità di coltivazione e gli aspetti nutrizionali.
