Objectives

The ultimate aim of the WELBEEF project is to produce a management guide for the pre-slaughter of fattening calves in order to improve animal welfare and reduce the incidence of DFD meats and petechiae, i.e. to improve the quality of meat and its shelf life.
The general objective is divided into 3 specific objectives:
1) Determine the effect of heat stress and evaluate pre-slaughter heat reduction strategies on the farm.
2) Assess the effect of the duration of transport before slaughter and the pre-slaughter waiting time.
3) Study human-animal interaction in the handling between the waiting corrals in the slaughterhouse and the time of slaughter.

Objectives

El objetivo final del proyecto WELBEEF es hacer una guía de manejo durante el pre-sacrificio de terneros de engorde para mejorar el bienestar animal y reducir la incidencia de carnes DFD y petequias, es decir mejorar la calidad de la carne y su vida útil.

El objetivo general se divide en 3 objetivos específicos:

1) Conocer el efecto del estrés por calor y evaluar estrategias de reducción de calor en granja previos al sacrificio.

2) Evaluar el efecto de la duración del transporte antes del sacrificio y tiempo de espera previo al sacrificio.

3) Estudiar la interacción hombre-animal en el manejo entre los corrales de espera del matadero y el momento de sacrificio.

 

 

Activities

1) A survey will be produced to evaluate practices between the start of loading on the farm to the time of slaughter in order to relate how these practices are linked to the appearance of DFD meats and petechiae.
2) A study will be carried out to evaluate the waiting time in corrals in the slaughterhouse in short and long distance transports in order to assess how the stress of transport and handling in the slaughterhouse affects the shelf life of the meat.
3) A protocol for interaction between workers and animals in the slaughterhouse will be designed, including types of slaughter to determine how it affects stress and meat quality.

Activities

1) Se creará una encuesta para evaluar las prácticas desde el inicio de la carga en la granja hasta el momento de sacrificio para relacionar estas prácticas con la aparición de carnes DFD y petequias.

2) Se llevará a cabo un estudio para evaluar el tiempo de espera en los corrales al matadero en transportes cortos y largos para evaluar cómo afecta el estrés del transporte y manejo en el matadero sobre la vida útil de la carne.

3) Se diseñará un protocolo de interacción entre trabajadores y animales al matadero, incluyendo tipo de sacrificio para ver cómo afecta al estrés y la calidad de la carne.

 

 

Context

The meat production sector, including producers, transporters and slaughterhouses is subject to constant public attention, and its practices are being called into question from the perspective of animal welfare. Improving pre-slaughter management guidelines will not only improve animal welfare, but can also help improve the quality of the meat and the public perception of fattening calf production.
Meat quality may be negatively affected by pre-slaughter conditions. Pre-slaughter involves all the changes in conditions and activities that take place prior to slaughter, including changes in environmental temperature, the loading and unloading of calves on the farm and at the slaughterhouse, their transportation, mixing of animals, the waiting time at the slaughterhouse, the type of slaughter, etc. Many studies show that the stress that animals experience during these changes of conditions and activity varies depending on their duration and intensity, and increases the negative effects on meat. Stress and physical activity deplete muscle glycogen, leading to an increase in pH that changes in the physical appearance of the meat, leading to meat that is DFD (dark, firm and dry). However, very little information is available on the relationship between pre-slaughter factors and the appearance of petechiae in meat. This has led us to the WELBEEF project, which aims to produce pre-slaughter management guidelines for improving animal welfare and meat quality.
