The objective of the project was to find the best environmentally sustainable technology for producing a fiber-rich dietary supplement containing bioactive compounds from raspberry seeds—raspberry seed powder—and to carry out product development for health products based on berry purées enriched with this dietary supplement and raspberry seed oil. During the project, it was determined which level of purification and grinding for raspberry seed powder is best for use as a dietary supplement in health food compositions. To this end, trials were conducted, resulting in a suitable technological solution for obtaining raspberry seed powder with high quality indicators.

As one variant of the starting material, the natural press cake resulting from the oil pressing of raspberry seeds was used, and as a second variant, the natural press cake from juice pressing was used. The press cake was ground to the desired fineness. An analysis of the size distribution and impurities of the seed fraction was performed, and the quality characteristics of the seeds were described. The collected samples were analyzed for key quality indicators, and shelf-life tests were carried out. Product recipes were developed, and product prototypes were prepared. Within the framework of the project, study trips abroad were also conducted to develop cooperation and collect additional information necessary for product development from trade fairs.
