Context
The market for Arbequina olive oils has multiplied more than tenfold in the last 25 years.Now the vast majority of these oils are no longer produced in Catalonia but elsewhere. Therefore, some differentiation within the global Arbequina oil market is becoming necessary.
The polyphenols found in extra virgin olive oils are responsible for its sensory attributes of bitterness, tang and astringency. These compounds also vary considerably depending on the variety, level of ripening, cultivation techniques, and the extraction and storage systems used. The European Food Safety Authority (EFSA) endorses a health claim that olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. The claim may be used only for olive oil containing at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil.
Arbequina oils have been highly valued for their aromatic richness, and in many areas where they are produced, they have a notable smoothness due to their low phenolic content. This project consists on seeking this distinction based on the area of origin: the effect of the edaphic, climatic and handling conditions of the Arbequina variety on the characteristics of its extra virgin oils. In specific terms, the increase in polyphenols in the Arbequina olive is very important for giving the variety this differential vector, and enhancing its links with its Catalonia and/or Lleida origin.
The project covers various scenarios for the management of olive trees and the processes involved in oil milling and conservation systems in order to find their effect on the content of polyphenols and to ascertain the most important factors in obtaining Arbequina oil with high levels of polyphenols that could use the EFSA health claim.
Objectives
The general objective of the project is to develop techniques and methodologies for companies producing extra virgin olive oil which enable them to increase the level of polyphenols in their oil, and thereby make better use of the "health" vector as an added value in their production of olive oil.
The Operational Group will work to produce an oil from the Arbequina olive variety (the variety covering the largest area in Lleida) with a larger naturally occurring proportion of polyphenols in extra virgin olive oil, by working on the various parts of the olive production process: cultivation, milling and storage/conservation.
Objectives
El objetivo general del proyecto es desarrollar técnicas y metodologías para las empresas productoras de aceite de oliva virgen extra que les permitan incrementar el nivel de polifenoles en el aceite y así poder aprovechar mejor el vector "salud" como un valor añadido a la producción de aceite de oliva.
El Grupo Operativo trabajará para conseguir un aceite proveniente de la aceituna variedad Arbequina (la variedad con mayor superficie en Lleida) con una mayor cantidad naturalmente presente de polifenoles en el aceite virgen extra trabajando, en las diferentes partes del proceso de producción oleícola: campo, almazara y almacenamiento/conservación
Activities
The results of the experiments carried out show that it is possible to obtain oils from the Arbequina variety that meet the requirements of the health claim.
The participating companies were able to determine the composition of the phenolic fraction of their oils and the related sensory attributes in more detail, and to adapt their manufacturing process to raise the concentration levels. The oils with the highest concentration of phenols in each mill were oils with a level of ripeness that was not excessively low, and which were filtered immediately after centrifugation and stored in an inert atmosphere.

Los resultados de las experiencias desarrolladas muestran que es posible obtener aceites de la variedad Arbequina que cumplen los requisitos de la alegación de salud.
Las empresas participantes han podido conocer con más detalle la composición de la fracción fenólica de sus aceites y los atributos sensorial relacionados y adaptar el procesos de elaboración para incrementar la concentración. Los aceites con concentración más elevada de fenoles en cada cual de los molinos han sido aceites con un grado de madurez no excesivamente bajo, filtrados inmediatamente después de la centrifugación y conservados bajo atmósfera inerte.
