El objetivo principal del proyecto es mejorar la solubilización de compuestos antioxidantes en Aceites de Oliva Vírgenes procedentes de la variedad Arbequina mediante el empleo de prácticas agrícolas, que a su vez éstas sean más comprometidas con el medio ambiente y elaiotécnicas.

Objectives


Improve the solubilization of antioxidant compounds in virgin olive oils from the Arbequina variety through the use of agricultural practices, which in turn are more committed to the environment and the technic.​

Increase his competitiveness thanks to the increase of their antioxidant capacity through agronomic practices and the implantation in the oil mills of technical knowledge that reduces the loss of phenols during the extraction process. This increase in competitiveness will improve the profitability of these oils, as their low content of antioxidants causes a shorter commercial life.
