FINALMEAT - INNOVACIÓN CÁRNICA INTEGRAL
Objectives
Develop a project focused on the integral innovation of the process of
production of new meat snacks from bovine native cattle of La Rioja and the
improvement of livestock slaughtering conditions.
- Evaluation of native cattle of La Rioja according to parameters related to
the quality of the meat (race, age, food).
- Innovation in cattle slaughtering procedures, especially improvements for the
animal welfare and first phases of slaughter, phases that have the most impact on quality
of the flesh.
- Validation of results through analysis of meat quality parameters
as nutritional values, pH, aW and texture.
- Development of a novel meat product, using raw materials
of La Rioja
Objectives
Desarrollar un proyecto centrado en la innovación integral del proceso de
producción de nuevos snacks cárnicos a partir de reses bovinas autóctonas de La Rioja
‐ Evaluación de reses autóctonas de La Rioja en función de parámetros relacionados con
la calidad de la carne
‐ Innovación en procedimientos de sacrificio de reses, especialmente en mejoras para el
bienestar animal y primeras fases del sacrificio, fases que más repercuten a la calidad
de la carne.
‐ Validación de los resultados mediante análisis de parámetros de calidad de la carne
como valores nutricionales,
‐ Desarrollo de un producto cárnico novedoso, mediante utilización de materias primas
autóctonas de La Rioja,
