Objectives
The project will develop a cost-effective and automatic system for the production of edible mushrooms and mushroom cultivation substrates, as well as recycling of consumed cultivation substrates in Sweden. The aim is to reduce the cost of Shiitake mushroom production by at least 30 percent through new and patented technology with integrated industrial processes in a cost-effective way, among other things by reducing energy use by about 40 percent, and recycling the cultivation substrate for new energy production. The goal is to, in a cost-effective and eco-friendly way, grow protein-rich edible mushrooms in Sweden.

Projektet ska utveckla ett kostnadseffektivt och automatiskt system för produktion av matsvamp och svampodlingssubstrat, samt återvinning av förbrukat odlingssubstrat i Sverige. Syftet är att genom ny och patenterad teknik med integrerade industriprocesser på ett kostnadseffektivt sätt minska kostnaden för Shiitake-svampproduktion med minst 30 procent, bland annat genom att minska energianvändningen med cirka 40 procent, samt återvinning av odlingssubstratet för ny energiproduktion. Målet är att på ett kostnadseffektivt och miljövänligt sätt odla klimatsmart och proteinrik matsvamp i Sverige.
Activities
Activities of the project includes: Process development for using pot-tray technique for mushroom production. Design of dual-functional chamber for substrate pasteurization and mushroom drying. Laboratory validation and industrial relevant tests of the system and processes. Project coordination, management and evaluation and development.
Activities
Aktiviteter inom projektet omfattar: Processutveckling för användning av teknik med brätten inom svampproduktion. Konstruktion av en dubbelfunktionell kammare för pastörisering av odlingssubstrat samt svamptorkning. Laboratorievalidering och industriella relevanta tester av systemet och processerna. Projektkoordinering, ledning och utvärdering och utveckling.
