CHampITINE - Valorisatie van paddenstoelen nevenstromen naar chitine/chitosan
Objectives
With a view to a circular economy, the valorisation of by-products in the agro-food sector is becoming increasingly important. This operational group wants to investigate whether chitin and/or chitosan in by-products from mushrooms and oyster mushrooms, such as cut mushroom feet, can be valorised as bioactive components. The main goal is to valorise mushroom by-products, in order to create an alternative earning model for mushroom growers.
Objectives
Met het oog op een circulaire economie wordt de valorisatie van nevenstromen in de agrofoodsector alsmaar belangrijker. Deze operationele groep wil onderzoeken of chitine en/of chitosan in nevenstromen van champignons en oesterzwammen, zoals afgesneden paddenstoelvoetjes, valoriseerbaar zijn als bioactieve componenten. Het hoofddoel is te komen tot de valorisatie van reststromen uit de paddenstoelteelt, met het oog op een alternatief verdienmodel voor paddenstoelentelers.
Activities
For this purpose, data will be collected on:
- the volume of mushroom by-products in Flanders;
- the requirements in terms of logistics and preservation of the by-products;
- the chitin content in the by-products;
- the extraction yield of chitin from promising by-products;
- the possible sales markets and associated pricing.

Hiervoor zal data verzameld worden omtrent:
- de omvang van de paddenstoelennevenstromen in Vlaanderen;
- de vereisten naar logistiek en bewaring van de nevenstromen;
- het chitinegehalte in de nevenstromen;
- het extractierendement van chitine uit beloftevolle nevenstromen;
- de mogelijke afzetmarkten en geassocieerde prijszettingen.
