Objectives

The objective of the project is to improve cooperation, the integration of the value chain and the search for synergies to gain dimension in the DOP Idiazabal cheese sector. Driving a culture of collaboration, innovation and cooperation, it is tried to progress in sectoral cohesion, making the different agents stop being seen as mere competitors to join efforts in common benefit objectives. Specifically, the objectives are to promote efficiency along the value chain of Idiazabal DOP cheese, from the production of milk to the market and to facilitate stable agreements between producers and processors.

Objectives

El objetivo del proyecto es mejorar la cooperación, la integración de la cadena de valor y la búsqueda de sinergias para ganar dimensión en el sector del queso DOP Idiazabal. A través de potenciar la cultura de colaboración, innovación y cooperación, se pretende provocar un aumento de la cohesión sectorial, haciendo que los diferentes agentes dejen de verse como meros competidores para sumar esfuerzos en objetivos de beneficio común. Específicamente, se establecen como objetivos, el fomento de la eficiencia a lo largo de la cadena de valor del queso DOP Idiazabal, desde la producción de leche al mercado y facilitar compromisos estables entre productores y transformadores.

Activities

The activities outlined in the cooperation project are understood as a compilation of: the information existing in the different areas to work, the feasibility of its systematization and the detection of common interests between different links in the value chain. The available time and the resources allocated, have made it possible to approach all the actions raised, analyzing their feasibility. They have materialized to the extent that they have allowed the availability of data and alignment in the objectives of all the agents involved, identifying in any case, the difficulties encountered and the alternatives proposed.

Activities

Las actividades planteadas de partida en el proyecto de cooperación se entienden como una recopilación de: la información existente en las diferentes áreas a trabajar, la factibilidad de su sistematización y la detección de intereses comunes entre distintos eslabones de la cadena de valor. El tiempo disponible y los recursos asignados, han permitido realizar un acercamiento a todas las actuaciones planteadas, analizando su viabilidad. Se han materializado en la medida en que lo han permitido la disponibilidad de datos y la alineación en los objetivos de todos los agentes implicados, identificándose en todo caso, las dificultades encontradas y las alternativas planteadas.

1 Practice Abstracts

From the activity of the group the following main results have been derived:

  • A simple tool, which allows to monitor the monthly milk and cheese productions in the DOP Cheese Idiazabal in Spreadsheet. This format is accessible to any interested person and facilitates that each one can treat the data offered in a personalized way. The data are provisionally published at 15 days of expired month and definitely at 45 days.
  • A proposal of a standard contract designed to adapt to the specificities of the production of latxa ewes milk (seasonality, appellations of origin, physico-chemical and microbiological characteristics ...) and to ensure the best possible representativeness of sampling to determine settlement prices Of the milk. This model is available to all interested parties, to facilitate compliance with regulatory obligations on procurement in the dairy sector (both Royal Decree 1363/2012, as amended and derived orders).
  • Analysis of the characteristics of the farms that are included in the Idiazabal PDO: its contribution to the productive fabric, its accompanying needs, expectations. It also analyzes the destination of their milk by groups: own processing, small manufacturing industries and larger industries. The results allow us to focus more objectively that people may be more interested in being incorporated and how this can be facilitated and / or the empowerment of their livestock activity.
  • To foster the culture of cooperation between agents throughout the value chain, from the stable to the hands of the clientele.

De la actividad del grupo se han derivado los siguientes resultados principales:

  • Una herramienta sencilla, que permite realizar el seguimiento de las producciones mensuales de leche y queso en la DOP Queso Idiazabal en Hoja de Cálculo. Este formato resulta accesible a cualquier persona interesada y facilita que cada cual pueda tratar los datos ofrecidos de modo personalizado. Los datos se publican provisionalmente a 15 días de mes vencido y definitivamente a 45 días.
  • Una propuesta de contrato tipo pensada para adaptarse a las especificidades de la producción de leche de oveja latxa (estacionalidad, denominaciones de origen, características físico-químicas y microbiológicas…) y procurar la mejor representatividad posible de los muestreos para determinar los precios de liquidación de la leche. Dicho modelo está disponible para todos los agentes interesados, para facilitar el cumplimiento de las obligaciones normativas sobre contratación en el sector lácteo (tanto el Real Decreto 1363/2012, como sus modificaciones y Ordenes derivadas).
  • Análisis de las características de las explotaciones que se incorporan a la DOP Idiazabal: su aportación al tejido productivo, sus necesidades de acompañamiento, expectativas. También se analiza el destino de su leche por grupos: elaboración propia, pequeñas industrias transformadoras e industrias de mayor tamaño. Los resultados permiten enfocar con mayor objetividad que personas pueden estar más interesadas a incorporarse y como puede facilitarse esa puesta en marcha y/o la potenciación de su actividad ganadera.
  • Favorecer la cultura de la cooperación entre los agentes de toda la cadena de valor, desde el establo hasta las manos de la clientela.
