Quality valorisation of pig lots at slaughterhouse on welfare and carcass quality

Objectives
The objective of the project is the valorisation of pork from pig born, bred and slaughtered in Italy. At the slaughtering stage, a pig payment system will be set up based on the welfare found on the farm and on the basis of carcass quality indexes such as homogeneity in weight of the lot, yield in primal and quality of the ham.
In the farm, a microclimatic control system will be made available to the production sites, and at slaughter, a calculation sheet for the valorisation of the lots.
The first will allow the sites to organize themselves in the best way to guarantee welfare conditions for animals. The second will be a useful system for the introduction of a pig quality payment system.

Obiettivo del progetto è la valorizzazione del suino nato, allevato e macellato in Italia. In macello, verrà definito un sistema di pagamento basato sul benessere di allevamento e sulla base di indici di qualità della carcassa quali l'omogeneità del peso di lotto , la resa dei tagli principali e la qualità del prosciutto.
Nell'azienda agricola sarà messo a disposizione un sistema di controllo microclimatico e al momento della macellazione un foglio di calcolo per la valorizzazione dei lotti.
Il primo consentirà ai siti di organizzarsi nel modo migliore per garantire condizioni di benessere per gli animali. Il secondo sarà un utile sistema per l'introduzione di un sistema di pagamento di qualità.
Activities
The project foresees a first activity on the farm where the measuring instruments for animal welfare parameters will be installed, such as: harmful gases, light, humidity, temperature. With regard to the slaughterhouse, a system for measuring the quality of the consignments will be developed with the aim of enhancing the meat of the national swine, born, raised and slaughtered in Italy.

Il progetto prevede una prima attività in allevamento dove verranno installati gli strumenti di misurazione dei parametri legati al benessere animale, quali: gas nocivi, luce, umidità, temperatura. Relativamente al macello sarà messo a punto un sistema di misurazione della qualità delle partite conferite con l’obiettivo di valorizzare la carne del suino nazionale, nato, allevato e macellato in Italia.

Verify in the breeding the most suitable self-control procedures for the aspects concerning the environmental control and the materials for exploration and manipulation.
Verify in breeding the validity of a computer system for the verification of the self-control procedures of support for the assignment of the possible quality rewards related to animal welfare.
Verify in the slaughterhouse a quality payment model based on defined indices, such as: homogeneity of the assigned batch, yield in the loin, thigh yield, thigh defectiveness. This represents a strong process innovation aimed at promoting PDO quality.
Verify the possibility of defining optimal ranges within which the carcasses will have to move, by weight, in addition to the yield of the two noblest cuts in the carcass.
Verify the possibility of using this information to promote national pork.
Verificare in allevamento le più idonee procedure di autocontrollo per gli aspetti riguardanti il controllo ambientale e i materiali per esplorazione e manipolazione.
Verificare in allevamento la validità di un sistema informatico per la verifica delle procedure di autocontrollo di supporto per l’assegnazione dei possibili premi qualità legati al benessere animale.
Verificare in macello un modello di pagamento a qualità sulla base di indici definiti, quali: omogeneità della partita conferita, resa in lombo, resa in coscia, difettosità della coscia. Questo rappresenta una forte innovazione di processo finalizzato alla promozione della qualità DOP.
Verificare la possibilità di defininire range ottimali all’interno dei quali dovranno muoversi le carcasse, in peso, oltre quelli di resa dei due tagli più nobili della carcassa.
Verificare la possibilità di utilizzare queste informazioni per promuovere la carne di suino nazionale.
