Objectives

Making organizational innovations to the dairy supply chain through the prototyping of a supply chain for the product Latte Fieno TSG - Traditional Specialities Guaranteed, in order to create economic, social and environmental value for the Apennine areas of the Emilia-Romagna Region. The prototype will concern one or more supply chains (for products such as fresh milk, yoghurt, fresh and seasoned dairy products) by bringing together local production vocations with market opportunities. The main geographical target of the Plan are the rural areas with development problems.


Objectives

Apportare innovazioni organizzative alla filiera lattierocasearia attraverso la prototipizzazione di una filiera, ad oggi inesistente, per il prodotto Latte Fieno STG - Specialità Tradizionale Garantita al fine di creare valore economico, sociale e ambientale per le aree appenniniche della Regione Emilia-Romagna. Il prototipo tratterà di una o più filiere (per prodotti quali latte fresco, yogurt, latticini freschi e stagionati) facendo incontrare le vocazioni produttive territoriali con le opportunità di mercato. Il target geografico principale del Piano sono le aree rurali con problemi di sviluppo.


Activities

Exercise of cooperation; conducting market analysis; organization of Working Tables; assessments of production and processing processes and technologies; carrying out tests to process milk in fresh and seasoned products and panel testing of new products; realization of the prototype of the Latte Fieno supply chain and the Business Plan of the processing plant; identification of the aggregative form to network the actors of the supply chain (the Protection Consortium is hypothesized); drafting of documents and reports for the dissemination of the purposes, actions and results of the Plan.

Esercizio della cooperazione; conduzione di analisi di mercato; organizzazione di tavoli di lavoro; valutazioni dei processi e delle tecnologie di produzione e trasformazione; realizzazione di prove di trasformazione in prodotti freschi e stagionati e panel test dei nuovi prodotti; realizzazione del prototipo della filiera e del Business Plan dell’impianto di trasformazione; individuazione della forma aggregativa per mettere in rete gli attori della filiera (si ipotizza il Consorzio di Tutela); redazione di documenti e report per la divulgazione delle finalità, azioni e risultati del Piano.

2 Practice Abstracts

The SARS-Cov-2 affair did not undermine the original aims of the Lattefieno Plan. However, three groups in the mountains worked in the direction of the project, although they had to limit the exchange of experiences, processes, and methodologies in presence in favour of hybrid methods. This being said, the implementation of the Plan was successfully concluded. The activities started in October 2019 according to the following schedule.


Specifically, the definition and development of a model that starts from the barn, a specific barn, defined as an 'ethical barn', absolutely innovative that focuses on the wellbeing of the animals that populate it, its energy sustainability as far as possible, the breeds for the mountain territories in which the Plan is developed (most suitable also in consideration of their ability to recover pastures and outdoor life), the logistical efficiency of milk distribution, up to the definition of an artisanal dairy, capable of accommodating the production of 3 to 5 stables on a homogeneous territory, and equipped for the production of fresh cheese and yoghurt in addition to carrying out milk pasteurisation; finally, the characteristics were defined for the construction of a participatory distribution system focusing on proximity and direct sales.


La vicenda SARS-Cov-2 non ha compromesso le finalità originari del Piano Lattefieno. App, tuttavia tre gruppi della montagna hanno operato nella direzione del progetto, pur dovendo limitare lo scambio di esperienze, processi, metodologie in presenza a favore di modalità ibride. Premesso questo la realizzazione del Piano si è conclusa in modo positivo. Le attività si sono avviate nel mese di Ottobre 2019 secondo il seguente planning.


Nello specifico si è confermata la definizione e lo sviluppo di un modello che parte dalla stalla, una specifica stalla, definita "stalla etica", assolutamente innovativa che metta al centro il benessere degli animali che la popolano, la sua sostenibilità energetica per quanto possibile, le razze per i territori montani In cui si sviluppa il Piano (più adatte anche in considerazione della loro capacità di recuperare pascoli e vita all'aperto), l'efficienza logistica della distribuzione del latte, fino alla definizione di un caseificio artigianale, in grado di ospitare la produzione di 3 a 5 stalle su un territorio omogeneo, e attrezzato per la produzione di formaggi freschi e yogurt oltre allo svolgimento dell'attività di pastorizzazione del latte; infine si sono definite le caratteristiche per la costruzione di un sistema distributivo partecipativo focalizzando l'attenzione sulla prossimità e la vendita in modalità dirette.


The new Latte Fieno TSG supply chain model can support the redistribution of wealth (mainly among farmers), social equity and healthy diets by focusing on people's work and their place of origin. The supply chain that the Plan will prototype aims to promote production and transformation processes that are sustainable from an economic, environmental and social point of view. The Plan mainly focuses on a prototype of the TSG Latte Fieno supply chain including a traceability system with blockchain technology, a regulation for the transformation of the TSG Latte Fieno and a Business Plan for a TSG Latte Fieno processing plant. The prototype will describe the value chain and the most direct path from the Emilia-Romagna Apennines to the consumer. Thanks to the prototype the producers will be able to benefit from new market opportunities, with positive repercussions on rural production areas that are typically at a competitive disadvantage. The transformation specification, currently missing in Italy, will be able to benefit the actors of the dairy chain and enhance the TSG Latte Fieno. Finally, the Business Plan will provide a service to already existing companies in the supply chain, which will have a tool to develop their activities and will open up entrepreneurial opportunities to subjects not yet in the market. All activities intend to generate benefits for rural areas with development problems.


Il nuovo modello di filiera del Latte Fieno STG può sostenere la redistribuzione della ricchezza, l’equità sociale e gli stili alimentari salubri ponendo al centro il lavoro delle persone e i loro luoghi di radicamento. La filiera che il Piano intende prototipare mira a promuovere processi di produzione e trasformazione sostenibili dal punto di vista economico, ambientale e sociale.


Dal Piano di Innovazione si attende principalmente un prototipo della filiera del Latte Fieno STG comprensivo di un sistema di tracciabilità con tecnologia blockchain, un disciplinare di trasformazione del Latte Fieno STG e un Business Plan per un impianto di trasformazione del Latte Fieno. Il prototipo descriverà la catena del valore e il percorso più diretto dall’appennino emiliano-romagnolo al consumatore. Grazie al prototipo i produttori potranno beneficiare di nuove opportunità di mercato, con ricadute positive sui territori rurali di produzione che tipicamente sono in condizioni di svantaggio competitivo. Il disciplinare di trasformazione, a oggi mancante in Italia, potrà avvantaggiare gli attori della filiera lattiero-casearia e valorizzare la STG Latte Fieno. Infine, il Business Plan fornirà un servizio alle imprese della filiera già esistenti, che disporranno di uno strumento per sviluppare le loro attività, e aprirà possibilità imprenditoriali a soggetti non ancora nel mercato. Tutte le attività intendono generare valore a beneficio delle aree rurali con problemi di sviluppo.
