Objectives

- Obtain sufficiently high-quality wheat with an adequate production volume.
- Promote more sustainable and appropriate agronomic practices in the region.
- Obtain a fair price for farmers.                                                                                                                                                                                                                                              
- Obtain a quality bread flour and an all-purpose flour.
- Increase the visibility of the farming and agrifood sectors’ commitment to the region, by producing and purchasing local products.
- Reach a consensus between farmers and processors on purchase prices and quality standards.
- Raise awareness of the characteristics of the products made by artisan bakeries.
- Act as a spokesperson for the project among consumers and users, such as at schools and media.
- Strengthen the role of bakers in the region.

- Obtener un trigo de suficiente calidad y con un volumen de producción adecuado.
- Fomentar prácticas agronómicas más sostenibles y adecuadas al territorio.
- Conseguir un precio justo para las personas agricultoras.
- Conseguir una harina panificable y polivalente de calidad.
- Hacer visible el compromiso del sector agrícola y el sector agroalimentario.
- Consensuar precios de compra y estándares de calidad entre agricultores y las empresas transformadoras.
- Dar a conocer las características de los productos que elaboran las panaderías artesanas.
- Ser el altavoz del proyecto a nivel de consumidores y usuarios: escuelas, medios de comunicación, etc.

Activities

- Trials on the cultivation of different wheat varieties with the potential to convert the flour into bread-making flour.
- Incorporating technology and precision farming in field studies to improve efficiency in planting time, fertilisation, soil fertility and microbiology.
- Mapping fields to control unwanted weeds by precision farming and reducing herbicide use.
- Studies to test and characterise flour and its potential for use in bread making.
- Promoting and disseminating the culture of artisan bread made from local cereal flour.

Activities

- Ensayos de cultivo de diferentes variedades de trigo con potencialidades para que su harina se convierta en panificable.
- Incorporación de tecnología y agricultura de precisión en los estudios de campo para mejorar la eficiencia en el momento de plantar, del adobe, la fertilidad del suelo y la microbiología.
- Mapeo de los campos para el control de hierbas no deseadas mediante agricultura de precisión y reducción en la aplicación de herbicidas.
- Estudios de comprobación y caracterización de la harina y sus potencialidades para que pueda convertirse en panificable.
- Promoción y divulgación de la cultura del pan artesano elaborado con harina de cereales de proximidad.

Context

The idea for the Mistral Flour operational group arose from the desire to diversify uses of the cereal to provide greater added value to the production and quality of the cereal, and obtain characteristics for wheat so as to obtain flour that can be used to make bread and, therefore, be included as a quality raw material in people’s diets.
