Objectives

The aim of current study was to compare the microflora from soil, vegetable warehouse and vegetables using metagenomic monitoring to detect possible pathogens in environment that can cause the postharvest losses. In addition, the project aimed at development of new products for valorization of nonstandard vegetables.

Projekti eesmärk oli võrrelda metagenoomilise analüüsi abil põllumuldade, köögiviljaladude ja neis säilitatavate köögiviljade mikrofloorat, et detekteerida võimalikke keskkonnast pärit olevaid patogeene, mis põhjustavad säilimiskadusid. Lisaks oli projekti eesmärk arendada välja uusi tooteid väärindamaks ebastandardseid köögivilju.

Activities

During this project the sequencing analysis of bacterial and fungal consortia from samples of vegetable field soil, vegetable warehouses and stored vegetables was performed by Illumina Miseq platform. The dominating bacteria and fungi were determined, also the pathogenic microorganisms were identified. Also, the monitoring of environmental parameters (temperature, humidity, CO2 content) of vegetable warehouses was performed throughout the study to evaluate their optimality for storage of vegetables. In addition, the new vegetable products were developed during project using different technologies. By using nonstandard vegetables it is possible to reduce the post-harvest losses. Different chemical and sensory analyses, also the storage tests of products were performed during the course of this project.

Activities

Projekti jooksul teostati köögiviljapõldude mullaproovide, köögiviljaladude ja neis ladudes säilitatavate köögiviljade bakteriaalsete ning seenekoosluste sekveneerimisanalüüs Illumina Miseq platvormil. Selgitati välja proovides leiduvate koosluste domineerivad bakterid ja seened ning patogeenid. Lisaks toimus kogu projekti vältel ladude keskkonnaparameetrite (temperatuur, niiskus ja CO2 sisaldus) monitooring, et hinnata nende optimaalsust köögiviljade säilimise seisukohalt. Projekti jooksul teostati mitmeid tootearenduslikke töid, mille tulemusena valmisid eri tehnoloogiad kasutades mitmesugused köögiviljatooted. Viimaste valmistamisel saab ära kasutada ebastandardseid köögivilju ning vähendada toormekadusid. Valmistatud toodetele viidi läbi erinevaid keemilisi analüüse, sensoorseid analüüse ning säilivuskatseid.
