Objectives

1. Recover historical recipes for distilled spirits, aromatised wines, vermouths, ratafias and liqueurs from the Penedès and El Priorat regions.
2. Carry out pilot tests for the recipes that are viable and which have profiles with the most authenticity and/or territorial distinctiveness.
3. Optimise the system to prepare the best and most representative recipes.
4. Highlight the new products in coordination with the trade and tourist sectors.
5. Valorisation of low value-added products and wine by-products 
6. Promote new business lines
7. Promote local products (wine, aromatic herbs, fruits and flowers from the region) and the circular economy (valorisation of co-products).

Objectives

 

  1. Recuperar las recetas históricas de destilados, vinos aromatizados, vermuts, ratafías y licores del Penedès y del Priorat.
  2. Hacer pruebas piloto de aquellas recetas que sean viables y con mayor tradición.
  3. Optimizar el sistema de elaboración de la mejores recetas tradicionales.
  4. Poner en valor los nuevos productos  en coordinación con los sectores turístico y comercial.
  5. Valorización de productos de bajo valor añadido  y de subproductos vínicos .
  6. Fomento de nuevas líneas para las bodegas participantes.
  7. Fomento de los productos de proximidad (vino, hierbas aromáticas, frutas y flores de la comarca) y de la economía circular (valorización de co-productos).

Activities

The conclusion was that a reinterpretation of historical recipes for Catalonia's distilled spirits, aromatised wines, vermouths, ratafias and liqueurs can give rise to new and interesting products. As observed in the study of the production process, this is easily adaptable to the production systems and equipment of most modern wineries.
As a result, the members of the operational group were all able to develop and market new and unique products of commercial interest with strong links to the region using low value-added products, and did so by acquiring knowledge applied to the various techniques used to obtain them.

Activities

Se concluye que una reinterpretación de recetas históricas de destilados, vinos aromatizados, vermuts, ratafías y licores de nuestro territorio puede dar lugar a nuevos productos que resulten de interés, y que tal y como se ha observado en el estudio del proceso, éste es fácilmente adaptable a los sistemas y equipamientos de producción de la mayoría de bodegas actuales. Gracias a ello, los socios del grupo operativo han podido elaborar y comercializar todos ellos nuevos productos singulares con interés comercial y alta vinculación al territorio partiendo de productos de bajo valor añadido, y lo han hecho adquiriendo al mismo tiempo conocimiento aplicado sobre diferentes técnicas para obtenerlos.

Context

The aim is to diversify the market for Catalan wine products by recovering historical and traditional recipes, producing a new range of unique aromatised wines, distilled spirits and liqueurs from base wines made with the main varieties of grape found in the Penedès and El Priorat regions and aromatic herbs from both areas to obtain a high-quality product that is 100% unique and maximises the authenticity of the wine-producing areas represented by the member cooperatives of the Operational Group.
