Il progetto è stato avviato perché non esiste una catena del valore o una conoscenza della produzione di prodotti derivati dai legumi. Negli ultimi decenni i legumi sono stati raramente coltivati in Alto Adige. L’ Unione Agricoltori e Coltivatori Diretti Sudtirolesi ha notato un valore aggiunto in questa nicchia e ha pertanto deciso di esplorarla. Dopo aver discusso lo schema del progetto con i partner, è emersa la necessità di avere prima una prova di concetto. Questo è stato fatto dai ricercatori del centro di ricerca di Laimburg. Nel frattempo, è emerso chiaramente che non solo la coltivazione deve essere ripristinata, ma anche la conoscenza del processo di produzione dei diversi prodotti deve essere analizzata e resa operativa. Inoltre, mancano diverse informazioni relative alla tassazione. Per garantire la vendita del prodotto, il progetto prende in considerazione anche il lancio sul mercato, includendo anche informazioni sulle indicazioni nutrizionali.

The project is launched because there is no value chain or knowledge in the production of products originated from legumes. Legumes has rarely been cultivated in the last decades in South Tyrol. The South Tyrolian famer association has noticed an added value in this niche. Therefore, it should be explored. After discussing the project outline with partners, it was clear to have first a proof of concept. This was done by researchers at the Laimburg research center. In the meantime, it became clear that not only the cultivation has to be reinstated but also the knowledge of the production process for different products, must be analyzed and brought to live. In addition, several information regarding to taxing are missing. To secure the selling of the product also the market launch is considered in the project. In the market launch includes also information of nutrition claims.
