Remming Stofwisseling Witlofpennen
Context
Het coaten van de wortelpennen in de opslag kan leiden tot zwaardere kroppen met tot 13% meeropbrengst aan verkoopbaar product. Alleen is dit nog niet in de praktijk uitgetest. Ook is nog niet onderzocht wat bij verbeterde bewaring, de winning van vezels, inuline en bitterstoffen uit reststromen voor rendementsverbetering oplevert.
Objectives
In a practical study it was confirmed that coatings increase the production of chicory heads for human consumption. It has also been shown that the use of recoverable constituents from residual streams (fibers, inulin and bitter substances) provides added value for the grower.

In een praktijkonderzoek is bevestigd dat coatings de productie verhoogt van witlofkroppen voor de menselijke consumptie. Ook is aangetoond dat benutting van winbare inhoudsstoffen uit reststromen (vezels, inuline en bitterstoffen) meerwaarde oplevert voor de teler.
Activities
● In practice, testing an integrated washing and coating device to inhibit the metabolism during the storage of chicory roots;
● testing a metabolic inhibiting coating that is permitted as food contact material;
● developing or collecting knowledge about the starch and sugar content and the bitter substances of the cultivated chicory roots and the influence of the coating on them;
● checking the influence of storage on the starch, sugar and bitter substance content.
Activities
● In de praktijk gaan testen van een geïntegreerde was- en coatinginrichting om de stofwisseling te remmen bij de bewaring van witlofpennen;
● het testen van een stofwisseling remmende coating die is toegelaten als voedselcontact materiaal;
● het ontwikkelen of verzamelen van kennis over het zetmeel- en suikergehalte en de bitterstoffen van de geteelde witlofpennen en de invloed van de coating daarop;
● het nagaan van de invloed van bewaring op het zetmeel -, suiker- en bitterstoffengehalte.
