Objectives
The aim of this project is to develop methods for producing new food products made from side streams from kale and broccoli production. During commercial production of these crops, a great part of the plant that is edible is either not harvested (leaves and leaf stems), or discarded after harvest (kale leaf stems, and some parts of the kale leaves). We want to develop methods for harvesting and handling of the unused parts, and further develop processing methods for nutritious new food products, that primarily are aimed for foodservice, and with good taste and food safety. Production economy for the harvest, handling and distribution will be studied, and climate/ environmental effects will be regarded.

Ökad produktion av livsmedel i Sverige, liksom självförsörjningsgrad och beredskapslager vid kris är högaktuella ämnen idag, där de globala livsmedelsflödena störs av olika kriser. Innovationen skall ta fram nya ”våta” produkter, som förpackade puréer och hackade produkter, med huvudsaklig målgrupp foodservice. Detta möjliggör tillvaratagande av råvara som annars skulle bli svinn. I projektet vill vi utveckla nya halvfabrikat såsom kylda kokta kålprodukter, som lätt går att använda i foodservice (till restauranger, caféer, snabbmatställen, företagskunder och offentlig verksamhet).
Activities
Innovationen görs i flera steg: 1. Ny arbetsmetodik utvecklas för skörd och hantering efter skörd av användbara delar av grönkålsplantan, som idag inte skördas, eller rensas bort efter skörd (bladstjälk plus delar av blad).
2. Processteknik och förpackning, utvecklas för framtagning av ”våta” produkter från sidoströmmar av grönkåls- och broccoliproduktion.
3. Olika processmetoder utvärderas beträffande näringsinnehåll och mikrobiologisk säkerhet.
4. Marknadsintroduktion och affärsmodeller analyseras i samverkan med deltagande företagspartners.

We want to develop methods for harvesting and handling of the unused parts, and further develop processing methods for nutritious new food products, that primarily are aimed for foodservice, and with good taste and food safety. Production economy for the harvest, handling and distribution will be studied, and climate/ environmental effects will be regarded. Processing methods will be adapted for retaining the high nutrient content in the crops and for achieving good microbiological quality, and analyses will be performed. Methods for processing will initially be studied in small-scale trials, and evaluated for market potential, including taste and nutrient aspects. Large-scale experiments in commercial facility will follow for the chosen products. Included in the project is a special focus area of market and marketing ensuring good opportunities for the new products.
