Context

The INNOVATION of this PROJECT, based on the sustainability and the efficiency of available resources, aims to create new supply chains in order to relaunching traditional production (silkworm rearing) at regional and national level, optimizing the resources available in the region.
The project applies the principle of circular economy promoted by the EU (maximum use of resources and minimum waste production - zero waste - COM / 2014/0398).
The PROJECT ORIGINATES from specific demands from farmers of Piedmont:
- Mellano M., involved in the production of mulberry fruit, which in a period of high productivity would like to manage the large quantities of green mulberry pruning waste in a sustainable way for both an economic and environmental point of view
- Perano D., a rabbit breeder who wants to differentiate his production and to offer a rabbit meat with the following characteristics on the market: (i) obtained with raw materials (feed formulation) of Piedmont origin, (ii) with an improved chemical-nutraceuticals composition (enrichment in n3 polyunsaturated fatty acids), (iii) more responsive to consumer requirements in terms of chemical-sensorial composition and economic-environmental sustainability. The farmer intends to reduce the ration cost and consequently increase its income over feed cost
- Ribotta R., Fea M. and Vallino A., who like to diversify their company production
Textile companies interested in obtaining 100% made in Italy silk
MARKETS of interest: farms, breeders, agri-food, feed and textile companies.

Activities

The project activities were: i) production of fresh fruits - short supply chain - or fruits processed by the agro-industry - dried fruits, jams and other innovative products (FRUIT CHAIN); ii) use of green pruning residues deriving from the fruit chain and leaves from mulberry plants (LEAF CHAIN) for the production of fodder for zootechnical use (fresh leaves and dried leaves meal); iii) use of fresh leaves for silkworm rearing (SILKWORM CHAIN) and use of dried leaves meal for the formulation of a diet for rabbits (RABBIT CHAIN) or for the preparation of an artificial diet for silkworm rearing (SILKWORM CHAIN).

Activities

Le attività del progetto sono state: i) produzione di sorosi freschi - filiera breve - o trasformati dell’agroindustria – sorosi essiccati, confetture e altri prodotti innovativi (FILIERA FRUTTO); ii) utilizzo degli sfalci verdi di potatura derivanti dalla filiera frutto e delle piante di gelso a duplice attitudine (FILIERA FOGLIA) per la produzione di foraggio ad uso zootecnico (foglie fresche e farina di foglie parzialmente disidratate); iii) impiego delle foglie fresche per l’allevamento del baco da seta (FILIERA BACO DA SETA) e della farina di foglie parzialmente disidratate per la dieta di conigli (FILIERA CONIGLIO) o per la produzione di una dieta per il baco da seta (FILIERA BACO DA SETA).

3 Practice Abstracts

Unlike other countries in the world, in the past, the production of mulberry fruits in Italy represented a secondary activity linked above all to sericulture. The project proposes new agronomic models for the cultivation of mulberry, which may be of high interest in the current context of crisis of the traditional fruit species and in consideration of climate changes, which require looking at diversification to increase the resilience of the tree crops. In this project, the valorisation of the mulberry contributes to the development of new agri-food chains in Piedmont, through the creation of a synergy within the same regional territory between fruit companies and those dedicated to the production and marketing of jams and other derived products. The use of new cultivation models and innovative characterization techniques (phytochemical fingerprinting) aim to enhance fresh fruits and products derived from them as sources of bioactive molecules and develop an effective tool for quality control, traceability and standardization of the entire supply chain with a consequent full valorisation of the related agri-food products (fresh or dried fruits, or processed fruits for jams). A considerable innovation consists in the fact that pruning residues are used as raw material for rabbits feeding, transforming a by-product into a resource, according to a principle of circularity.

A differenza di altri Paesi nel mondo, in passato, la produzione di frutti di gelso ha rappresentato in Italia un’attività secondaria legata soprattutto alla bachicoltura. Il progetto GELSO-NET propone nuovi modelli colturali per la coltivazione del gelso, che possono avere interesse elevato nell’attuale contesto di crisi di diverse specie da frutto tradizionali e in considerazione dei cambiamenti climatici, che impongono di guardare a una diversificazione varietale per aumentare la resilienza dei sistemi arborei. In questo progetto la valorizzazione del gelso contribuisce in maniera innovativa allo sviluppo di nuove filiere agroalimentari in Piemonte, attraverso la costituzione di una sinergia all’interno dello stesso territorio regionale tra le aziende frutticole e quelle dedicate alla produzione e commercializzazione di confetture e altri prodotti derivati dai sorosi. L’uso di nuovi modelli colturali e tecniche innovative di caratterizzazione (fingerprinting fitochimico) hanno lo scopo di valorizzare i frutti freschi e i prodotti da essi derivati come fonti di molecole bioattive e sviluppare un efficace strumento per il controllo di qualità, la tracciabilità e la standardizzazione dell’intera filiera con una conseguente piena valorizzazione dei relativi prodotti agroalimentari (frutti freschi, essiccati e trasformati in confetture). Una considerevole innovazione consiste nel fatto che i residui di potatura sono utilizzati come materia prima per l’alimentazione dei conigli, trasformando un residuo in risorsa, secondo un principio di circolarità.

In Piedmont, the mulberry tree was cultivated for the production of leaves that constituted indispensable food for the breeding of silkworms. Sericulture, which is inextricably linked to mulberry cultivation, contributed to the well-being and livelihood of countless families for many years.
The cultivation of cultivating the mulberry plant, and the silk worm rearing, are strongly connected each other and represent the first stage of the silk production process.
In the past, the province of Cuneo was the national leader in the production of cocoons for the silk industry. Silkworm cultivation was abandoned in the early 20th century and is today of little significance in terms of production.
The innovation of the GELSO-NET project is twofold. Firstly, it is linked to the revitalisation of sericulture and silk worm rearing sectors, which represent a potential for the productive diversification of farms as, if properly managed, it would still provide income. Secondly, the use of an artificial diet that allows for a traditional production revisited in an innovative key, freeing itself from the seasonality that prevents the breeding of the silkworm throughout the year.
The considerable multi-functionality of the mulberry tree, declined in a strictly synergic way between operators of different sectors, can create a virtuous multi-sectoral circuit. The added value deriving from the realisation of the planned activities has potential positive effects on both on primary producers (farm) and on a wider set of operators and sectors (textile industry).

Le aziende cunicole del Piemonte sono caratterizzate da un buon livello tecnologico e da dimensioni medio grandi (da 100 a 1000 fattrici). Sono presenti circa 70 allevamenti professionali localizzati in collina o montagna o nei fondo valle alpini, in particolare nella provincia di Cuneo.
Negli ultimi anni, a causa delle forti oscillazioni del prezzo di vendita della carne e dell’aumento del costo delle materie prime utilizzate nell’alimentazione degli animali, il settore è in forte sofferenza. Parallelamente, i produttori di gelso da frutta si trovano con elevate quantità di residui di potatura verde generati dal vigore delle piante. Le foglie sono note per le loro peculiarità compositive (fibra, acidi grassi polinsaturi e composti polifenolici). Utilizzare tali scarti per generare nuovi prodotti (materia prima) all'interno di una filiera affermata (coniglio) consente l'impiego e la valorizzazione dei principi nutritivi in essi contenuti, esaltando il concetto dell'economia circolare in accordo con la Direttiva Europea 2008/98/CE.
L’innovazione del progetto GELSO-NET è legata all’utilizzo di materie prime innovative (farina di foglie di gelso) che consentono non solo di valorizzare uno scarto di potatura (economia circolare – zero waste) ma anche di ridurre il costo della razione e di ottenere un prodotto che meglio risponde alla sempre maggiore sensibilità del consumatore alle tematiche di sostenibilità ambientale. L’azienda cunicola riusce quindi ad avere un incremento del reddito tramite sia una diminuzione del costo della razione che un incremento di vendita del prodotto (valore aggiunto riconosciuto dal consumatore).

In Piedmont, the rabbit farms are characterized by good technological level and medium-large size (from 100 to 1000 mares). In the whole region, there are about 70 specialized farms located in hilly or mountainous areas, or in Alpine valley bottoms, particularly in the province of Cuneo. In recent years, the sector is suffering due both to the sharp fluctuations in the meat sales price and to the increase in the costs of raw materials used in animal feed. At the same time, fruit mulberry producers have to manage high amounts of green pruning residues generated by the vigor of mulberry fruit trees. Mulberry leaves are well known for their favourable chemical composition in terms of fiber, polyunsaturated fatty acids and polyphenolic compound contents. Using the green pruning residues to generate new products (raw material) within an established supply chain (rabbit meat production) allows the use and valorization of the nutritive compounds contained in the leaves, enhancing the concept of circular economy in accordance with the European Directive 2008/98/EC.
The innovation of the GELSO-NET project is related to the use of an innovative raw material (mulberry leaves meal) that:

(i) enables the valorization of a waste/by-product (circular economy - zero waste);

(ii) reduces the feed cost;

(iii) enables to obtain a meat which better fits the consumer sensitiveness towards the environmental sustainability issue.

The farms increase their income through both the reduction of the feeding cost and the increase of meat product sales (benefit recognized by the consumer).
