Development of vegetarian mixture products from side-streams of broccoli production
The problem at present is that a big part of the plant is left in the field or cleared away as broccoli and other cabbagege sorts are harvested. The innovation consists of finding ways to make use of this waste. In this project we will develop, from raw product that currently is wasted, new wholesame vegetable products, which create additional production value.

Utveckling av vegetariska inblandningsprodukter av sidoströmmar från broccoli- och grönkålsproduktion
Problemet idag är att en stor del av plantan lämnas kvar i fält eller rensas bort när broccoli och andra kål skördas. Innovationen består i att finna sätt att ta tillvara det svinn som förekommer. I projektet utvecklas, från den råvara som idag ratas, nya hälsosamma vegetabiliska produkter som skapar mervärde i produktionen.
Activities
In the project conditions are created for decreasing waste and increasing profits within swedish cabbage growing, by developing ways to harvest and use a bigger part of the plants compared to what is done today. A new product, consisting of raw product that presently is wasted and plowed into the field, is used to create a mixture product for wholesome vegetable products.

I projektet skapas förutsättningar för att minska svinn och öka lönsamheten i svensk kålodling genom att ta fram metoder för att skörda och tillvarata en större del av plantan än vad som förekommer idag. En ny produkt, bestående av råvara som idag inte tas tillvara utan plöjs ned på fältet, används för att skapa en inblandningsprodukt i hälsosamma vegetabiliska produkter.
