Objectives
The aim of the project is to produce a new and innovative snack product from fruit and vegetables that has favorable nutritional properties, is made from regional ingredients and is produced and marketed by Thuringian companies.

Ziel des Vorhabens ist die Herstellung eines neuartigen und innovativen Snackproduktes aus Gemüse und Obst, dass ernährungsphysiologisch günstige Eigenschaften aufweist, aus regionalen Zutaten hergestellt wird und durch Thüringer Unternehmen produziert und vermarktet wird.
Activities
In small-scale trials (kitchen scale), the recipe for this snack is to be developed in practice, nutritionally evaluated and sensory tested. The most promising product developments for marketing will then be transferred to production scale (scale-up trials). Ultimately, the snack products will be brought to market maturity, a marketing strategy will be developed and the products will be presented to the public in initial advertising campaigns. We expect at least one market-ready snack product that can be sold in the retail trade from the end of the project.
Activities
In Kleinversuchen (Küchenmaßstab) soll die Rezeptur dieses Snacks in der Praxis entwickelt, ernährungsphysiologisch bewertet und sensorisch getestet werden. Die für eine Vermarktung aussichtsreichsten Produktentwicklungen sollen dann in den Produktionsmaßstab (ScaleUp-Versuche) überführt werden. Letztendlich werden die Snackprodukte zur Marktreife geführt, eine Marketingstrategie entwickelt und die Produkte in ersten Werbe-aktionen der Öffentlichkeit vorgestellt. Wir erwarten mindestens ein marktreifes Snackprodukt, das ab Projektende im Einzelhandel verkauft werden kann.
