Context

The aim of the project is to produce high quality calçots that can be easily identified and differentiated from others available on the market. A further aim is to develop new products that increase farm yields. To achieve these results, we have developed a comprehensive strategy that encompasses all stages from seed to processed product, through the field, storage chambers and quality assurance. The agents involved in this project represent the major players in the calçots industry, from both production and research areas.

Objectives

The main objective of the project is to develop new products with high added value from calçots of the Protected Geographical Indication (PGI), Calçot de Valls, to differentiate them from other calçots available on the market, and at the same time, open new avenues of commercialisation that widen the current calçot market, such as exportation and new product development.

El principal objetivo del proyecto es desarrollar nuevos productos de alto valor añadido a partir del calçot producido por la IGP Calçot de Valls, con el fin de diferenciarse del resto de calçots presentes en el mercado y a su vez, abrir nuevas líneas de comercialización que faciliten la ampliación del mercado actual del calçot, a través, por ejemplo, de la exportación o el desarrollo de nuevos productos.

Activities

In conclusion, the activities carried out as part of this project have allowed a greater understanding of the cultivation of calçots, their post-harvest and transformation. The objectives set have been favourably achieved, and the results obtained open the door to greater efficiency and productivity in the cultivation and marketing of calçots and diversification of their use, with the development of new products, always considering quality as the key characteristic.
