Utveckling av analystjänster för honung
Objectives
Honey is one of the products in food industry that is widely exposed to fraud and there are few techniques available to detect faulse honey. We will develop new sevices to anlyse the geographical and botanical origin of honey. The project will also devlop services to improve the quality and the value of honey such as process optimization, shelf life analyses and taste description.

Honung är en av produkterna i matindustrin som ofta är utsatt för förfalskningar men det finns få tillgängliga tekniker att upptäcka förfalskad honung. Vi kommer att utveckla nya tjänster för att organisera och analysera honungens goegrafiska och botaniska ursprung. Projektet kommer också att utveckla tjänster för att förbättra kvaliteten och värdet för honung såsom processoptimering, hållbarhetsanalyser och smakbeskrivning.
Activities
A unique analyses method will be devolped to determine the origin of honey. The project will develope analyses services in order to secure the quality of honey through mapping of its characteristics to achieve capability to define the geographical as well as biological orgin.
A service will be developed to optimize the handling of the honey then this is not very devoloped in Sweden. This will include the handling as well as the storing of the product.
Activities
Projektet kommer att utveckla en unik analysmetod för ursprungsbestämmelse av honung. Projektet ska utveckla analystjänser för att kvalitetssäkra honung genom att kartlägga dess egenskaper för att definiera både det geografiska och biologiska ursprunget.
Det kommer också att skapas en tjänst för att optimera hanteringen av honungen då detta är eftersatt på många håll i Sverige. Detta gäller både hantering och förvaring av produkten.
Context
En del av den honung som importeras har förfalskats vilket har lett till minskat förtroende från svenska konumenter av honung. Den honung som importeras är dessutom i de allra flesta fall billigare än den svenska vilket minskar lönsamheten för svenska honungsproducenter eftersom kunder verkar välja den billigare varianten.
