Design of a natural leather protection solution during slaughter to minimize health risk

Objectives
Interbev Normandie identified 10 slaughtering sites across the region in 2019 with more than 420,000 cattle slaughtered in 2018. The objective of this project is to provide slaughterhouses with a solution to limit bacteriological contamination during of the slaughter process. It is recognized in the meat industry that most of the contamination of large cattle is introduced into the slaughter lines by the animals themselves, which can lead to the emergence of bacteria responsible for potentially serious diseases for humans. This project aims to test natural solutions in order to achieve better control of the sanitary quality of meat

Interbev Normandie a recensé 10 sites d’abattage sur l’ensemble de la région en 2019 avec plus de 420 000 bovins abattus en 2018. L’objectif de ce projet est de mettre à disposition des abattoirs une solution permettant de limiter les contaminations bactériologiques lors du processus d’abattage. Il est reconnu dans la filière viande que la majeure partie de la contamination de gros bovins est introduite sur les chaînes d’abattage par les animaux eux-mêmes, pouvant entraîner l’apparition de bactéries responsables de maladies potentiellement graves pour l’homme. Ce projet se donne comme objectif de tester solutions naturelles afin d’aboutir à un meilleur contrôle de la qualité sanitaire de la viande

1 Practice Abstracts
It is planned to test a protection in the form of a natural gel (made from chitin, a natural polysaccharide), which will be deposited on the surface of bovine hides. This protective layer will fix soiling so as to limit microbial contamination that can be transmitted at slaughter, from the leather to the carcass. This solution has the advantage of being non-destructive of leather and allowing its recovery. The results of feasibility tests and specifications for the implementation of this technique within the sector will be proposed, which will improve the health quality of meat products.
Il est envisagé de tester une protection sous forme de gel naturel (fabriqué à base de chitine, polysaccharide naturel), qui sera déposée sur la surface des cuirs des bovins. Cette couche protectrice fixera les souillures de façon à limiter les contaminations microbiennes pouvant être transmises à l’abattage, du cuir vers la carcasse. Cette solution présente l’avantage d’être non destructrice du cuir et de permettre sa valorisation. Les résultats d’essais de faisabilité et un cahier des charges de mise en place de cette technique au sein de la filière seront proposés, ce qui permettra d’améliorer la qualité sanitaire des produits carnés.
