Objectives
The aim of the project is to establish a complete new value chain from iris cultivation to high-priced end product. The dried and refined iris rhizomes obtained are marketed to the pharmaceutical, food, cosmetics and perfume industries. Obtaining reliable data on cultivation, harvest quantities, labour input, use of machinery and post-harvest treatment up to accelerated ageing of the rhizomes are necessary. Within the project, all relevant steps from planting, multiplication, care of the crop, harvest and processing shall be developed and optimised. A further objective is scientific monitoring and risk assessment along the entire value chain.
Objectives
Ziel des Projektes ist die Etablierung einer kompletten, neuen Wertschöpfungskette vom Irisanbau bis zum hochpreisigen Endprodukt. Die gewonnenen getrocknete und veredelte Irisrhizome finden Absatz in der Pharma-, Lebensmittel-, Kosmetik- und Parfümindustrie. Es sollen belastbare Daten zu Anbau, Ernte, Arbeit, Maschinen und Nacherntebehandlung bis hin zur beschleunigten Alterung der Rhizome gewonnen werden. Mit der Erprobung können aller relevanten Schritte von der Pflanzung, Vermehrung, Pflege der Kultur, Ernte und Verarbeitung entwickelt und optimiert werden. Ein weiteres Ziel ist die wissenschaftliche Verfolgung und Risikobewertung über die gesamte Wertschöpfungskette.

Context
Iris rhizomes and the extracts made from them (e.g. essential oil) are traded globally, but their production takes place exclusively abroad. In recent years, more and more quality problems have arisen in the countries of cultivation (especially China and Morocco). Due to the slow growth of the plant (2 to 3 years), the use of manual labour and the necessary but unprofitable long drying and storage time of the rhizomes (at least 3 years), cultivation and processing does not take place in Bavaria. A method for accelerated ageing of rhizomes was developed and patented in Bavaria. With this method, within a few weeks a double amount of fragrances can be produced. There are so far no empirical data on field cultivation and industrial use of this plant. The establishment of this new crop therefore represents an economic risk for the farmers.
Die Irisrhizome und die daraus hergestellten Extrakte (z.B. ätherisches Öl) werden global gehandelt, deren Herstellung erfolgt aber ausschließlich im Ausland. In den letzten Jahren sind immer mehr Qualitätsprobleme in den Anbauländern (v.a. China und Marokko) aufgetreten. Bedingt durch das langsame Wachstum der Pflanze (2 bis 3 Jahre), den Einsatz von Handarbeit und die notwendige, aber unrentable lange Trocknungs- und Lagerzeit der Rhizome (mindestens 3 Jahre), findet der Anbau und die Verarbeitung in Bayern nicht statt. Eine Methode zur beschleunigten Alterung von Irisrhizomen wurde in Bayern entwickelt und patentiert. Damit kann innerhalb weniger Wochen etwa der doppelte Gehalt an Duftstoffen erzeugt werden. Es gibt aber bisher kaum Erfahrungswerte und Daten zum Feldanbau und zur industriellen Nutzung dieser Pflanze. Die Etablierung dieser neuen Sonderkultur stellt daher ein wirtschaftliches Risiko dar.

1 Practice Abstracts
The specialty crop iris and the processing of iris rhizomes for the fragrance and flavor industry was successfully established in Bavaria. For this, planting, weeding and harvesting techniques were developed. In addition, procedures to clean, to chop and to dry the rhizomes were established. Thereby the use of current techniques and its respective modification was helpful. the development of the new processes can initially be realized with cheap second-hand devices. Based on this, the ongoing adjustement of the eqquipment during use or a complete conversion during winter was necessary and possible. The capability to recognize and to solve problems already on the field or during processing is crucial. In case of complex products like iris, the collaboration with other participants like producing companies or scientific institutes is recommended, as not all occurring challenges can be managed alone. In case of a niche product like iris, which production is expensive, an ongoing dialog with potential customers from the beginning is crucial, in order to avoid a production not in line with market trends and to guarantee profitability and subsequent distribution. In our opinion the key to success of such a niche producht is an outstanding quality, technological edge, transparency and traceability of the supply chain.
Die Sonderkultur Iris und die Verarbeitung von Irisrhizomen für die Duft- und Aromaindustrie konnte erfolgreich in Bayern etabliert werden. Dazu wurden Pflanz- und Hacktechnik sowie eine Erntemethode entwickelt. Außerdem wurden Verfahren zur Säuberung und Zerkleinerung der Rhizome und zu deren Trocknung etabliert. Hilfreich war dabei die Benutzung von bereits bestehender Technik und deren entsprechender Umbau. Die Entwicklung der Methoden kann vorerst mit günstigen, gebrauchten Geräten ausprobiert werden. Hier war ein ständiges Anpassen der Geräte während der Benutzung oder ein kompletter Umbau im Winter nötig. Entscheidend ist die Fähigkeit, Probleme bereits auf dem Feld oder während der Verarbeitung zu erkennen und möglichst zugig zu lösen. Bei komplexen Produkten wie der Iris, ist die Zusammenarbeit mit anderen Akteuren aus dem verarbeitenden Gewerbe und einem wissenschaftlichen Institut zu empfehlen, da man nicht alle Herausforderungen alleine lösen kann. Bei einem Nischenprodukt wie der Iris, das sehr aufwendig zu produzieren ist, ist von Beginn an ein ständiger Dialog mit potentiellen Kunden nötig, um nicht am Markt vorbei zu produzieren und um die Wirtschaftlichkeit und einen späteren Absatz zu garantieren. Unserer Meinung nach ist der Schlüssel zum Erfolg eines Nischenproduktes eine herausragende Qualität, Vorsprung durch Technik, Transparenz und Rückverfolgbarkeit der Lieferkette.
