Context
Several procedures will be developed in order to study the best alternatives for drastically reducing microbial contamination in meat conveyor belts of slaughterhouses during the process of meat production.
A prototype equipment will be designed for implementing two physical methods, cold plasma and/or ultraviolet (UV) light, to drastically reduce microbial contamination in meat conveyor belts during meat processing in cutting plants. At the same time, the effectiveness of this innovative system will be tested before its implementation. The effectiveness of continuous disinfection will allow:
- Acquisition of less-contaminated lots with a longer shelf-life, which will contribute to reducing the waste of raw materials and their derivatives
- Reduction in water, energy and disinfection product use, as the cleaning and disinfection operations will be less aggressive.
Objectives
The aim of the project was therefore to develop an integral system for continuous cleaning and disinfection of meat conveyor belts in order to significantly reduce the contamination of the conveyor belts during the operational process.

El objetivo del proyecto era desarrollar un sistema integral de limpieza y desinfección en continuo de cintas de transporte de carne para disminuir de forma significativa la contaminación de las cintas transportadoras durante el proceso operativo.
Activities
The results have given satisfactory cleaning and disinfection values. On an industrial scale, the results for steam and chemical treatments are satisfactory.The results obtained from the industrial trials have been positive, both for the continuous cleaning and disinfection of belts and for the cleaning and disinfection of tools and packaged meat product parts. In addition, sufficient new knowledge has been generated to define the basis for the design and development of an industrial system for continuous disinfection of conveyor belts, in industrial format, as well as a method of disinfecting tools and meat product parts while in operation.
Activities
Los resultados han dado valores de limpieza y desinfección satisfactorios. A escala industrial, los de los tratamientos de vapor y químicos son satisfactorios.Los resultados obtenidos en los ensayos industriales han sido positivos, tanto para la limpieza y desinfección en continuo de cintas como para la limpieza y desinfección de útiles y piezas de productos cárnicos envasados. Además, se han generado nuevos conocimientos suficientes para definir las bases para el diseño y desarrollo de un sistema industrial de desinfección en continuo de cintas transportadoras, en formato industrial, así como un método de desinfección de herramientas y piezas de productos cárnicos en funcionamiento.
