Objectives

Many dry vegetable producers in the region are involved in short-circuit and local production or direct sales. Despite these initiatives, the sustainability of their company is not guaranteed. It is necessary to identify new ways to increase economic value of these raw materials. The project proposes, through the creation of new legume products, to encourage agri-food companies to process these raw materials. The local demand for this raw material will encourage agricultural stakeholders to continue and improve their production: the starting point for the structuring of the "pulses" sector in PACA.

Objectives

De nombreux producteurs de légumes secs de la région se sont engagés dans des démarches de production en circuits-courts et de proximité ou en vente directe. Malgré ces initiatives, la pérennité de leur entreprise n'est pas garantie. Il est nécessaire d'envisager de nouvelles voies de valorisation de ces matières premières. Le projet propose, par la création de nouveaux produits à base de légumineuses, d’inciter les entreprises agroalimentaires à transformer ces matières prémières. La demande locale de cette matière première permettra d’inciter les acteurs du monde agricole à poursuivre et améliorer leur production: point de départ de la structuration de la filière « Légumes secs » en PACA.
