Objectives
Realizing substantial sales and market share of sustainable, healthy and local food via short chains in the urban consumer market, where the potential demand/needs of the urban consumer forms the starting point. What is essential is the development of new revenue models in combination with sales concepts tailored to the various target groups in order to "capitalize" on the sustainability performance and added value (food as a 'carrier' of ecological, social and societal values) in the urban market.
Objectives
Realiseren van een substantiële afzet en marktaandeel van duurzaam, gezond en lokaal voedsel via korte ketens in de stedelijke consumentenmarkt, waarbij de potentiële vraag/behoefte van de stedelijke consument het vertrekpunt vormt. Wezenlijk is daarbij de ontwikkeling van nieuwe verdienmodellen in combinatie met afzetconcepten afgestemd op de verschillende doelgroepen om de duurzaamheidsprestaties en de meerwaarde (voedsel als ‘drager’ van ecologische, sociale en maatschappelijke waarden) te “verzilveren” in de stedelijke markt.

- Market research: Recruit consumers/buyers for focus groups/sounding board groups
- Revenue models: How do we connect the quality requirements/expectations and food values of the urban consumer with the quality system of farmers/gardeners
- Sales concepts: an overarching umbrella concept for the urban market
- Increasing food appreciation
- Marketing and communication: development of a professional strategy and concrete approach to communication and marketing

- Vorming van een samenwerkingverband van boeren
- Marktonderzoek: Werven consumenten/afnemers voor focusgroepen/klankbordgroepen
- Verdienmodellen: Hoe verbinden we de kwaliteitseisen/-verwachtingen en voedselwaarden van de stedelijke consument met het kwaliteitssysteem van boeren/tuinders
- Afzetconcepten: een overkoepelend parapluconcept voor de stedelijke markt
- Vergroting waardering voedsel
- Marketing en communicatie: uitwerking van een professionele strategie en concrete aanpak van de communicatie en marketing
Context
Het aandeel van duurzame, gezonde en lokale producten in de stedelijke markt is zeer beperkt, terwijl uit diverse recente marktonderzoeken blijkt dat de potentiële markt aanzienlijk is. De uitdaging is hoe we de stedelijke consument verleiden/overtuigen duurzame, gezonde en lokale producten uit de eigen regio voor eerlijke (inclusieve) prijzen te eten, met andere woorden: Lokaal het Nieuwe Normaal.
