Objectives
Il Piano coinvolge la filiera agroalimentare della produzione del Parmigiano Reggiano DOP in aree collinari e montane del comprensorio. I sistemi foraggeri tradizionali gestiti con il cantiere di fienagione sono oggi messi in crisi dai cambiamenti climatici che condizionano negativamente le produzioni e la qualità del fieno prodotto.
Con questo Piano si intende realizzare lo studio di buone pratiche che possano valorizzare il pascolo e, più in generale, l’uso dell’erba verde; la caratterizzazione delle produzioni nei differenti segmenti della filiera e la sensibilizzazione del consumatore.
Objectives
The Operational Group involves the agri-food chain of the production of the Parmigiano Reggiano PDO in the hilly and mountain areas of the district. The traditional fodder systems managed through the haymaking yard nowadays are thrown into crisis by the climate changes that negatively affect the amount and the quality of the hay produced.
The aim of this OG is to study the best practices that can enhance the grazing and, more generally, the use of green grass, to characterize the productions throughout the different segments of the supply chain and to promote the consumer awareness.
Activities
The Operational Group aims to evaluate with a comparative approach the management of the haymaking yard used in primary production dairies with 2 alternatives related to the use of fresh grass in feeding: grazing and fresh mowing used in the feed lane. The comparative systems will serve to provide insights into the quality of production, the quantity of forage produced, the economic calculation of the management models as well as the environmental footprints derived from the use of the different management types of feeding the cows. Agronomic and grazing tests and production characterization will be conducted
Activities
Il GOI si pone l’obiettivo di valutare con approccio comparativo la gestione del cantiere di fienagione utilizzata nelle aziende di produzione primaria con 2 alternative legate all’impiego di erba fresca in alimentazione: il pascolo e lo sfalcio fresco con impiego nella corsia di alimentazione. I sistemi comparativi serviranno a fornire spunti relativi alla qualità delle produzioni, alla quantità di foraggio prodotta, al computo economico dei modelli gestionali nonché alle impronte ambientali derivate dall’utilizzo delle differenti tipologie gestionali di alimentazione delle bovine. Saranno condotte delle prove agronomiche e di pascolamento e caratterizzazione delle produzioni.

1 Practice Abstracts
The dairy farms involved in the OG will directly benefit from the work and the results of the plan and they will have the opportunity to either acquire or deepen innovative skills. All the intervention areas of the plan are immediately applicable in the farms, making the exchange between companies, and especially the training, a formidable tool for the improvement of business practices.
Indeed, the introduction of green grass in the feeding of all the categories of animals could mean, for the entire Parmigiano Reggiano chain, on one hand, an increase in resilience, an economic saving and an improvement in animal welfare, on the other, a more peculiar characterization of the seasoned product, with distinct organoleptic and health characteristics.
The operators of the sector will find particularry interesting the results arising form:
- the agronomic and grazing tests;
- the comparative evaluation of the different forage systems of the farm, i.e hay versus grass versus pasture;
- the composition of all the forage matrices of the farm;
- the composition of fatty acids (milk and cheese);
- the carbon water footprint along the supply chain, i.e. farms, dairy, target product, to set up the agricultural and the supply-chain activity in an eco-sustainable way.
Le Aziende partecipanti al GOI beneficeranno direttamente dei lavori e dei risultati del piano e avranno l’opportunità di acquisire o approfondire competenze innovative. Tutte le aree di intervento del piano sono immediatamente applicabili nelle aziende e questo rende lo scambio tra aziende, e la formazione in particolare, uno strumento formidabile per il miglioramento delle pratiche aziendali. Infatti, l’introduzione dell’erba verde nell’alimentazione di tutte le categorie degli animali, potrebbe significare, per l’intera filiera del Parmigiano Reggiano, da un lato, un aumento di resilienza, un risparmio economico e un miglioramento del benessere animale, dall’altro, una più specifica caratterizzazione del prodotto stagionato, con distinte caratteristiche organolettiche e salutistiche.
Di particolare interesse per gli addetti del settore saranno:
- le prove agronomiche e di pascolamento;
- la valutazione comparativa dei differenti sistemi foraggeri (di foraggiamento) aziendali: fieno versus erba versus pascolo;
- la composizione di tutte le matrici foraggere aziendali;
- la composizioni degli acidi grassi (latte e formaggio);
- le impronte del carbonio ed idriche in ottica di filiera (aziende, caseificio, prodotto target), per impostare l'attività agricola e di filiera in senso ecosostenibile
