Objectives
Reuse a by-product of the tomato industry, tomato pomace (OT), as the growth of a fungus that produces b-glucans, and incorporate it into lamb bait feed as a nutraceutical, protecting the animal's immune system and thereby improving its immune system. Contributing thereby to improving animal welfare and animal health, while reducing the use of antibiotics and impacting antimicrobial resistance.

Reutilizar un subproducto de la industria tomatera, el orujo de tomate (OT) como sustrato de crecimiento de un hongo productor de b-glucanos, e incorporarlo al pienso de cebo de corderos como nutraceútico potenciando el sistema inmunitario del animal y mejorando con ello su sistema inmunitario. Ello contribuirá a mejorar el bienestar animal y la sanidad animal, a la vez que reduce el uso de antibioticos ypor tanto repertute en lograr una menor incidencia de resistencias a los antimicrobianos.
Activities
The work to be carried out during this project can be summarized in the following main activities:
- Project coordination and management.
- Studies prior to the technical execution of the project: state of the art.
- Development of the biotransformation of the tomato pomace byproduct with the fungus Pleurotus ostreatus.
- Fattening of lambs using a diet based on the incorporation of biotransformed tomato byproduct.
- Analysis of biological samples.
- Design of digital tools to facilitate control and support decision-making in the process of fattening lambs in feedlots.

2 Practice Abstracts
This project is based on the revalorisation of an agricultural by-product
to reduce the cost of animal feed production and at the same time improve the sustainability of a livestock activity. The links between these sectors are ensured in this proposal, increasing value added along the links in the production chain and in the product. Research and innovation are ensured through the participation of Universities and an Agri-food Technology Centre with a long-standing experience in knowledge transfer. Finally, by using technologies to improve environmental management and efficiency during lamb fattening, this project promotes a reduction in the environmental impact of this activity thereby improving its efficiency.
The improvement in animal welfare and health achieved through this project allows the ovine production sector for a better prevention and control of biological risks that can affect the lamb, resulting in uncertainty for the Andalusian livestock sector, which is threatened by the arrival of exotic diseases that could lead to their commercial closure. At the same time, the improved health achieved in this project will make it possible to reduce the use of antimicrobial use and thereby reduce the likelihood of generating antimicrobial resistance reducing a public health for society in general and for professionally exposed personnel in particular. Finally, the activities focused on the estimation and activities focused on the estimation and reduction of greenhouse gas emissions will also greenhouse gas emissions will also result in an environmental quality.
GO TOMATHO will introduce technologies such as carbon footprint estimation, which will lead to professionalisation and improvement of efficiency of lamb rearing and fattening. The aim is to involve the different agents represented in this consortium, such as the
tomato sector, livestock production, sheep farming and knowledge and transfer agents, including a Technology Centre and two Universities. The association of the extensive sheep sector with Andalusia's rural area and the development of the knowledge generated in this proposal will benefit them, achieving a higher degree of development in the sector.
GO TOMATHO introducirá tecnologías como la estimación de la huella de carbono, que supondrán la profesionalización y mejora de la eficiencia en la cría y engorde de corderos. A través de la difusión del proyecto se pretende involucrar a los diferentes agentes representados en este consorcio, como el sector tomatero, ganadero y agentes de conocimiento y transferencia, incluyendo un Centro Tecnológico Agroalimentario y dos Universidades. Por lo tanto, es de esperar que se abran nuevas vías de cooperación entre estos sectores a través de las innovaciones propuestas. Dada la asociación del sector ovino extensivo con las zonas rurales de Andalucía, es esperable que el desarrollo del conocimiento generado en esta propuesta beneficiará al sector, logrando un mayor grado de desarrollo.
