Objectives

The main objective is the production of biodegradable packaging materials (PHAs) as an alternative to conventional plastics, using low-value by-products from the region's food industry as a carbon source. This objective aims to reduce the impact of the cheese industry (9% of the region's GDP) on plastic pollution, as the properties of these PHAs and their potential as packaging material for the different types of cheese produced in the region will be evaluated.

El objetivo principal es la producción de materiales de embalaje biodegradables (PHAs), como alternativa a los plásticos convencionales, utilizando como fuente de carbono subproductos de bajo valor de la industria alimentaria de la región. Este objetivo pretende reducir el impacto que tiene la industria quesera (9% del PIB de la región) en la contaminación de plástico, ya que se evaluarán las propiedades de estos PHAs y su potencial como material de envasado para los diferentes tipos de quesos que se producen en la región.  

Activities

  • Characterisation of the physical and chemical properties of whey, meat waste and used vegetable oils.
  • • Separation and pre-treatment of the fermented carbon source from each of the identified by-products.
  • • Optimisation of the production of PHAs at laboratory and pilot scale.
  • • Preparation and characterisation of a flexible film-type material with the PHAs produced.
  • • Preparation of alternative packaging materials with improved properties by blending biopolymers and adding active agents.
  • •Evaluation of the capacity of prepared packages to preserve Asturian cheeses of different consistency and typology..The results will be compared with cheeses packaged in conventional plastic.

• Caracterización de las propiedades físicas y químicas del lactosuero y los restos cárnicos y aceites vegetales usados
• Separación y pretratamiento de la fuente de carbono fermentada de cada uno de los subproductos
• Optimización de producción de PHAs a escala laboratorio y a escala piloto.
• Preparación y caracterización de material tipo lámina flexible con los PHAs producidos
• Preparación de materiales de envasado alternativo con propiedades mejoradas mediante
• Evaluación de la capacidad de los envases para conservar quesos asturianos de diferente consistencia y tipología. Se evaluará: carga microbiana, color, humedad, pH, índice de lipolisis, índice proteolítico y análisis organoléptico
