Objectives

The aim of the project is to introduce a new club variety of apple 'Bonita' into commercial production. The variety is apple scab resistant, so we can produce it using significantly less FFS, which allows for sustainable production. During the duration of the project, we will introduce the variety on several levels. First, we will develop the optimal production technology, then we will test different storage methods and finally anticipate a uniform marketing strategy in unique packaging. The result of the project will be a new practice in cultivation and an improved product that has a higher price range.

Objectives

Cilj projekta je uvedba nove klubske sorte jablane 'Bonita' v tržno pridelavo. Sorta je odporna na jablanov škrlup, zato jo lahko pridelujemo z uporabo bistveno manj FFS, kar omogoča sonaravno pridelavo.  V času trajanja projekta bomo uvajali sorto na več nivojih. Najprej bomo razvili optimalno tehnologijo pridelave, potem bomo preizkusili različne načine skladiščenja ter nazadnje predvideli enotno strategijo trženja v unikatni embalaži. Rezultat projekta bo nova praksa v pridelavi ter izboljšan proizvod, ki je višjega cenovnega ranga.

Activities

Project activities are divided into three groups:
1. Production technology (selection of optimum locatoin for the cv. 'Bonita', soil preparation according to the principles of sustainable production, planting and growing systems, training system, fertilization, protection from diseases and pests, fruit thining, care for the orchard after thining).
2. Storage (determining the optimum harvest window, the quality of the fruit before and after storage, controlled atmosphere storage).
3. Marketing (selection of the most appropriate packaging for different types of sales, marketing plan, promotion of the 'Bonita' variety).

Activities

Projektne aktivnosti so razdeljene na tri stebre:
1. Tehnologija pridelave (izbor optimalnih leg za sorto 'Bonita', priprava tal po principih sonaravne pridelave, sistemi sajenja in gojitvene oblike, nega tal, gojitvena rez od prvega do četrtega leta, gnojenje  s poudarkom na gnojilih, ki so dovoljena v ekološki pridelavi, varstvo pred boleznimi in škodljivci, redčenje plodov, oskrba nasada po redčenju).
2. Skladiščenje (določitev optimalnega obiralnega okna, kakovost plodov pred in po skladiščenju, skladiščenje v režimu s kontrolirano atmosfero).
3. Trženje (izbor najprimernejše embalaže za različne načine prodaje, načrt trženja in vstopa na trg, promocija sorte 'Bonita').

Context

Pobuda za prijavo projekta BONITA, NOVA ODPORNA KLUBSKA SORTA JABOLK V SLOVENIJI - OD PRIDELAVE DO TRŽENJA je prišla s strani skupine pridelovalcev iz treh različnih statističnih regij, ker želijo pri pridelavi jabolk uspešno uvesti eno najnovejših klubskih sort s pomočjo našega znanja in izkušenj v pridelavi jabolk v proizvodnjo ter proizvod ponuditi trgu na inovativen, nov način. Z uvajanjem klubskih sort smo v Sloveniji izjemno neuspešni in večkrat prezrti pri večjih klubih. S sorto 'Bonita' se nam je ponudila nova priložnost. 'Bonita' je nova klubska sorta z velikim potencialom (starša sta 'Pink Lady' in 'Topaz'), ki je v naših pridelovalnih razmerah še nismo gojili in je zato tehnologija pridelave neznana. Sorta je šibke rasti, odporna na jablanov škrlup, kar omogoča uvedbo številnih okolju prijaznih tehnoloških ukrepov. To je sodobna sorta, izredno zanimiva za potrošnike - atraktivne živo rdeče barve, čvrsta in hrustljava, sladko kislega in harmoničnega okusa. Uspešna uvedba te sorte v intenzivno pridelavo jabolk lahko pomeni pomembno novost v pridelavi in ima lahko izjemno pozitiven vpliv v danih zelo skeptičnih razmerah glede intenzivne pridelave jabolk v Sloveniji, saj razmere zadnjih treh let govorijo o močnem zmanjšanju površin intenzivne pridelave jabolk, relativno slabih pridelkih in zelo slabem gospodarskem položaju sadjarjev.
Takšna nova tehnologija pridelave, skladiščenja in trženja nove sorte lahko pomeni novo priložnost in služi kot primer večjemu številu majhnih in srednje velikih sadjarjev v Sloveniji.
Nova klubska sorta, nova okolju prijazna tehnologija, novi in inovativni pristop v trženju  pomeni novo veliko tržno priložnost v slovenski pridelavi jabolk.

BonitaSi is a new commercially interesting product among apples - as it is the only Slovenian brand of apples on our market. The brand is sold with the slogan “We choose good. We ared doing good. BonitaSi.” That is why it is sold at significantly higher prices than other cultivars, which places growers in a better economic position.

BonitaSi je nov tržno zanimiv izdelek na področju jabolk - saj je to edina slovenska blagovna znamka jabolk na našem trgu. Blagovna znamka se prodaja pod sloganom »Izberem dobro. Delam dobro. BonitaSi.« Zato dosega bistveno višje cene kot ostale sorte in s tem postavlja pridelovalce v boljši ekonomski položaj. 

A marketing and market entry plan was drawn up for the BonitaSi brand, consisting of the following segments: Starting point, Analysis of the situation (SWOT analysis of the Slovenian market, Analysis of the segmentation of food buyers in Slovenia, Analysis of the behavior of the Slovenian food consumer, Analysis of sales channels of food products in Slovenia, Importance of quality in food marketing in Slovenia, Summary of market analysis), Marketing strategy (Price position of the BonitaSi brand, Marketing communication of the BonitaSi brand, Positioning of the BonitaSi brand at the sale point, Communication, marketing and financial goals, Budget for the implementation of the marketing plan, Evaluation, control and supervision of the implementation), and the Plan of marketing and communication activities of the BonitaSi brand during the 2022-2023 period (Phase 1: Pre-preparation, Phase 2: Launch of the BonitaSi brand, Phase 3: Product campaign).

Za blagovno znamko BonitaSi je bil izdelan načrt trženja in vstopa na trg, ki ga sestavljajo te vsebine: Izhodišče, Analiza stanja (SWOT analiza slovenskega trga, Analiza segmentacije kupcev hrane v Sloveniji, Analiza vedenj slovenskega potrošnika hrane, Analiza prodajnih kanalov prehrambenih izdelkov v Sloveniji, Pomen kakovosti pri trženju živil v Sloveniji, Povzetek analize trga), Marketinška strategija (Cenovna pozicija blagovne znamke BonitaSi, Tržno komuniciranje blagovne znamke BonitaSi, Pozicioniranje blagovne znamke BonitaSi na prodajnem mestu, Komunikacijski, trženjski in finančni cilji, Proračun za izvedbo načrta trženja, Ovrednotenje, kontrola in nadzor izvedbe), in Načrt tržno-komunikacijskih aktivnosti blagovne znamke BonitaSi v obdobju 2022 – 2023 (Faza 1: Predpriprava, Faza 2: Lansiranje blagovne znamke BonitaSi, Faza 3: Produktna kampanja).

As this cultivar is resistant to apple scab, less plant protection products are required. We also addressed soil protection measures with the implementation of non-chemical procedures, which result in reduced use of plant protection chemicals and consequently a lower impact on the environment.

Ker je sorta odporna na jablanov škrlup to pomeni manj uporabe zaščitnih sredstev proti boleznim. Prav tako smo glede na nego tal začeli z izvajanjem nekemičnih postopkov, kar neposredno pomeni manjšo porabo FFS in manjšo obremenitev okolja. 

We defined quality standards and designed a unique packaging and a marketing program for the BonitaSi brand. During the third year of the project, apples are successfully marketed in Lidl and Spar stores.

Določeni so bili standardi kakovosti, izdelana unikatna embalaža ter program trženja za blagovno znamko BonitaSi. Jabolka se v tretjem letu projekta uspešno tržijo v trgovskih verigah Lidl in Spar. 

Bonita' is a very productive, firm, juicy and healthy cultivar that requires precise technological measures. Based on the first three years of experience, these requirements are described in detail in the technological instructions 'Sustainable production of apples of the 'Bonita' variety', available in both electronic (COBISS.SI-ID 129129475) and printed version (COBISS.SI-ID 125069571).

Bonita' je zelo rodna, čvrsta, sočna in zdrava sorta, ki zahteva posamezna natančna tehnološka opravila. Glede na prve triletne izkušnje je to natančno opisano v tehnoloških navodilih Trajnostna pridelava jabolk sorte 'Bonita' v elektronski (dostopna na tej povezavi (COBISS.SI-ID 129129475) in tiskani obliki(COBISS.SI-ID 125069571). 

During the EIP project "BONITA-new resistant club apple variety in Slovenia - from production to marketing", we succesfully connected producers that were mebers of the EIP project, grouped in the cooperative Tibona z.o.o. as well as other growers of the 'Bonita' cultivar, who were not members of the project, but are connected through the Štajerc Ltd company. For this purpose, we created a website, Bonita.si, which is now managed by the members of both groups. The collaborationskupina pridelovalcev of all 'Bonita' apple growers in Slovenia enables the establishment of a Producer group.

V okviru projekta EIP »Bonita, nova odporna klubska sorta jabolk v Sloveniji – od pridelave do trženja« smo uspešno združili člane projekta EIP, ki povezani v zadrugo Tibona z.o.o. in pridelovalce sorte 'Bonita', ki niso bili člani projekta in so povezani preko podjetja Štajerc d.o.o. Za ta namen smo oblikovali skupno spletno stran Bonita.si, ki so jo kmetijska gospodarstva prevzela v upravljanje. Povezovanje vseh pridelovalcev jabolk sorte 'Bonita' v Sloveniji  omogoča pogoje za ustanovitev skupine pridelovalcev. 

We conducted a marketing seminar with existing and potential 'Bonita' growers to assess their opinion on the marketing of 'Bonita' apples in Slovenia. The workshop was organized in small groups, and the process involved several stages of defining optimal marketing strategy. Apples of the 'Bonita' variety were identified as a product (reference example: car). The participants then defined the reasons for their decisions and interpretation. This was followed by an overview of competition in the market, which in Slovenia is potentially represented by apples of the Evelina apples. The later are marketed as very juicy apples but the participants of the workshop emphasized that 'Bonita' apples are comparable or even exceed 'Evelina' in this quality trait. Participants additionally highlighted the advantages and disadvantages of other varieties that could compete with 'Bonita' apples ('Topaz', Pink Lady) and prepared a price estimate. 'Bonita' apples have been placed at the top of the middle price range. Slovenian consumers are currently mostly in favor of red-colored apples, but they are also aware of the sensory properties of the fruit. Market research will focus on defining the characteristics that are most perceived and positively assessed by consumers. To improve 'Bonita' market placement we designed attractive packaging and logo. We have identified two companies that will market 'Bonita' apples and, together with the growers, developed the following marketing strategies: wholesale in retail chains, direct sales on the farm and sales in local markets. We defined the type of ‘Bonita’ apple consumer. They are intended for more demanding buyers of both sexes, live a health life and enjoy food and leisure activities.

Izvedli smo trženjsko delavnico, na kateri so pridelovalci podali svoje mnenje o trženju jabolk sorte 'Bonita' v slovenskem prostoru. Delavnica je potekala v manjših skupinah, proces pa je vključeval več stopenj oblikovanja trženjske strategije. Jabolka sorte 'Bonita' so udeleženci opredelili kot proizvod (referenčni primer: avtomobil). Sledil je pregled konkurence na trgu, ki jo v Sloveniji potencialno predstavljajo jabolka blagovne znamke Evelina. Udeleženci delavnice so bili mnenja, da je 'Bonita' po sočnosti, ki jo sicer izpostavljajo pri jabolkih Evelina, primerljiva ali celo izstopajoča. Osvetlili so prednosti in slabosti drugih sort, ki bi lahko predstavljale konkurenco jabolkom sorte 'Bonita' ('Topaz', 'Pink Lady') in pripravili cenovno oceno. Jabolka 'Bonita' so umestili v vrh srednjega cenovnega razreda. Slovenski potrošniki trenutno v večji meri izbirajo rdeče obarvana jabolka, a izpostavljajo tudi senzorične lastnosti plodov. Tržna raziskava bo zato usmerjena tudi v definiranje lastnosti, ki jih najbolj zaznajo in pozitivno ocenjujejo potrošniki. Da bi bila jabolka 'Bonita' na trgu čimbolj prepoznavna, smo oblikovali lično embalažo in logotip. Določili smo dve podjetji, ki bosta tržili jabolka sorta 'Bonita' in skupaj s pridelovalci oblikovali naslednje trženjske strategije: veleprodaja v trgovskih verigah, neposredna prodaja na kmetiji in prodaja na lokalnih tržnicah. Opredelili smo tip potrošnika jabolk 'Bonita'. Po njih naj bi posegali zahtevnejši kupci obeh spolov, starostne skupine od  15 do 50 let, ki bivajo v urbanem okolju, so prehransko ozaveščeni, skrbijo za svoje zdravje ter uživajo v hrani ter prostočasnih dejavnostih.

In the second year of the project "Bonita, a new resistant club apple variety in Slovenia - from production to marketing", we continued with technological measures to increase the quantity and quality of the crop and monitored the response of plants to environmental conditions. We have pinpointed the 'Bonita' variety as one of the most resistant varieties to spring frost in the assortment of frequently grown apples in Slovenian intensive orchards. Thorough maintenance of the training system is crucial for the development of the basic red color, as fruits need optimal lighting. Accurate winter pruning is very important, but equally, pre-harvest pruning should be implemented to additionally improve lighting conditions in the crown. Mature trees need to be machine-pruned after harvest. The 'Bonita' variety has an extremely high fertility potential and is less prone to alternance. Chemical thinning of the fruit is essential. Good results were obtained in experimental, two-year orchards by thinning with NAA-based products when the size of the fruit diameter was between 6 and 8 mm. To increase shelf life in cold storage, we need to determine optimal harvest time. Therefore, we evaluated the results of the harvesting regimes of the first two seasons and storage under different conditions. Detailed results will be reported at the end of the project. We have designed different types of packaging, which we will gradually introduce on the market in the coming years.

V drugem letu projekta »Bonita, nova odporna klubska sorta jabolk v Sloveniji - od pridelave do trženja« smo nadaljevali s tehnološkimi ukrepi za povečanje količine in kakovosti pridelka ter spremljali odziv rastlin na okoljske razmere. Izstopa ugotovitev, da je sorta 'Bonita' med odpornejšimi sortami na spomladansko pozebo v sortimentu pogosto gojenih jabolk v slovenskih intenzivnih nasadih. Natančno vzdrževanje gojitvene oblike drevesa je ključno za razvoj krovne rdeče barve, saj moramo plodovom zagotoviti optimalno osvetlitev. Zelo pomembna je tudi kakovostna in precizna zimska rez, zelo dobrodošla je rez pred obiranjem za dodatno osvetlitev, v poznejših letih tudi strojna rez po obiranju. Sorta 'Bonita' ima izjemno visok rodni potencial in je manj nagnjena k alternativni rodnosti. Kemično redčenje plodov je nujno. Dobre rezultate smo v poskusnih, dvoletnih sadovnjakih dosegli z redčenjem s pripravki na osnovi NAA v velikosti premera plodičev 6-8 mm. Za dolgo obstojnost plodov v skladišču moramo določiti optimalen čas obiranja, zato smo ovrednotili rezultate obiralnih režimov prvih dveh sezon ter skladiščenja pri različnih pogojih. Natančne izsledke bomo podali ob zaključku projekta. Oblikovali smo različne tipe embalaže, ki jo bomo v prihodnjih letih postopoma predstavili na trgu.

Recommendations for storage of Bonita apples



The fruits of 'Bonita' apples were harvested in the Posavje region on September 18th 2020. The harvest was plentiful, and different portions of fruit was subjected for storage analysis. The fruits were stored in the following conditions:



1. normal atmosphere, at a temperature of 1,5 ° C and 90% relative humidity;

2. dynamic atmosphere, at 1,0% O2 and 1,4% CO2 at a temperature of 1,5 ° C and a relative humidity of 90-92%;

3. fruits treated with a ripening inhibitor (1-MCP from Smartfresh) at the beginning of storage and stored in a dynamic atmosphere.



After three, five and seven months of storage, the quality of fruit was assessed according to the following parameters: skin color, fruit firmness and soluble solids content. Additionally, sensory  analysis was performed.



Based on the obtained results, we conclude that the concentrations of 1.0% O2 and 1.4% CO2 enable successful storage of 'Bonita' apples at least until May. Storage of apples of the 'Bonita' variety is possible in a normal atmosphere but only until the New year. The problem we noticed when storing apples in a normal atmosphere after the New Year is a wrinkled skin and a mottled color with brown tones, which is not reminiscent of typical apple scald.

Priporočila za skladiščenje jabolk sorte Bonita



Plodovi jablan sorte 'Bonita' so bili v Posavju obrani 18. 9. 2020. Pridelek je bil obilen in del plodov smo pripravili za skladiščenje.  Plodove smo skladiščili v različnih pogojih:



1.            v navadni atmosferi, pri temperaturi 1,5°C in 90% relativni vlagi;

2.            v dinamični atmosferi,  pri 1,0 % O2 ter 1,4 % CO2 pri temperaturi 1,5°C in relativni vlagi 90-92%;

3.            del plodov smo na začetku skladiščenja tretirali z inhibitorjem zorenja (1-MCP proizvajalca Smartfresh) in jih prav tako skladiščili v dinamični atmosferi.



Po treh, petih in sedmih mesecih skladiščenja smo preverjali kakovost plodov z naslednjimi parametri: barva kožice, trdota mesa in vsebnosti topne suhe snovi ter opravili senzorično analizo.



Glede na pridobljene rezultate sklepamo, da koncentraciji 1,0 % O2 in 1,4 % CO2 omogočata uspešno skladiščenje jabolk 'Bonita' vsaj do meseca maja. Skladiščenje jabolk sorte 'Bonita' je v navadni atmosferi mogoče do novega leta. Problem, ki smo ga zabeležili pri skladiščenju v navadni atmosferi po novem letu je nagubana kožica in zamolkla barva z rjavimi toni, ki pa ne spominja na tipično porjavitev kožice (skald).

Planting

Planting should be carried out during the winter, from January to March.

Planting depth should be adjusted to the height of the grafted point - the grafted point should be 20 cm above the ground.

Planting in furrows.

The recommended planting distance is 0.7-0.8 m in a row and 3.2 m between rows.

                                                                                          Cultivation pruning

Remove all premature shoots to 70 cm height, leave 3-4 well-developed shoots on the trunk. Then above the last shoot of the first level remove all shoots to the height of 10-20 cm and keep additional 3-4 shots above. Repeat the process once more to form 12-13 shoots and two light windows on the tree.

Sustainable plant protection.



A harvest timeframe for the Bonita variety was determined.

In 2020, the harvest timeframe was from September 11th to October 30th.

For marketing purposes, a corporate identity (CI) Bonitasi was created.

Primerne so J lega, JV, SV, JZ, SZ, V in Z lege. Neprimerna je severna lega.

Sajenje

Sajenje naj se izvede v zimskem času, od januarja do marca.

Globina sajenja mora biti prilagojena višini cepljenega mesta – cepljeno mesto mora biti 20 cm nad tlemi.

Sajenje v brazde.

Priporočena razdalja sajenja je 0,7-0,8 m v vrsti in 3,2 m med vrstami.

Gojitvena rez

Do 70 cm višine odstranimo vse predčasne poganjke, pustimo 3-4 dobro razvite poganjke na provodniku. Nato nad zadnjim poganjkom prvega nivoja izrežemo vse poganjke v višini 10-20 cm in ohranimo 3-4. Postopek ponovimo še enkrat, da na drevesu oblikujemo 12-13 poganjkov in dve svetlobni okni.

Trajnostno varstvo



Določeno je bilo obiralno okno za sorto Bonita.

V letu 2020 je bilo obiralno okno od 11. 9. do 30.10.



Za namene trženja je bila izdelana celostna grafična podoba (CGP) Bonitasi

           

Fruit drop just before harvest can be prevented by application of Obsthormon 24A, which is registered for this purpose. The orchard can be treated twice or maximum 3-times before harvesting. The first application is performed 20 to 25 days before the expected date of harvest, the second application 10 -15 days before harvest. Rarely, apple trees can be treated a third time, but in our conditions, this is the exception rather than the rule. Obsthormon 24A affects cell division and prevents the formation of abscission tissue in the fruit stalk. For the Bonita variety, 0.25 - 0.3 l/ha of Obsthormon 24A is used for the first treatment 20 -25 days before harvest and 0.2 l/ha of Obsthormon 24A for the second treatment 10 -15 days before harvest.



Odpadanje plodov tik pred obiranjem preprečimo z dodajanjem sredstva Obsthormon 24A, ki je registriran za te namene.  Tretiramo lahko 2- do največ 3-krat pred obiranjem. Prvo aplikacijo opravimo 20 do 25 dni pred predvidenim datumom obiranja plodov, drugo aplikacijo 10 -15 dni pred obiranjem. Izjemoma lahko tretiramo še tretjič,a v naših razmerah je to prej izjema kot pravilo. Pripravek Obsthormon 24A vpliva na ponovno delitev celic in prepreči tvorbo ločitvenega tkiva med pecljem in poganjkom. Za sorto Bonita uporabimo za prvo tretiranje 20 -25 dni pred obiranjem 0,25 – 0,3 l/ha sredstva Obsthormon 24A in za drugo tretiranje 10 -15 dni pred obiranjem 0,2 l/ha sredstva Obsthormon 24A.

In orchards of the 'Bonita' apple variety planted in different years, we are perfecting the production technology of this new, resistant club variety. The orchards are up to 4 years old, and some have been planted in this year. Various pruning, fertilizing, fruit thinning and protection measures are implemented. To accurately evaluate the impact of technological measures on the variety, we have set up practical experiments in two statistical regions.

This year, eight new 'Bonita' apple orchards were planted in three statistical regions, four orchards by partnership members and four by non-project fruit growers.

In all these orchards, the technology that is evaluated in detail in this EIP project will be introduced. Thus, we will check the adequacy of the technology in several locations and in several statistical regions. The planting of new apple orchards in Slovenia generally promotes the development of fruit growing.

We have created a conceptual design for the uniform marketing of apples and apple products 'Bonita', which will help to make them recognizable to consumers.



V različno starih nasadih jablane sorte 'Bonita' izpopolnjujemo tehnologijo pridelave te nove, odporne klubske sorte. Nasadi so stari do največ 4 leta, nekateri pa zasajeni šele v tem letu. Izvajajo se različni ukrepi rezi, gnojenja, redčenja in varstva. Da bi natančneje ovrednotili vpliv tehnoloških ukrepov na sorto, smo zastavili praktične poskuse v dveh statističnih regijah.

Letos je bilo v treh statističnih regijah zasajenih osem novih nasadov jablane sorte 'Bonita', štirje nasadi pri članih partnerstva in štirje pri sadjarjih, ki niso člani projekta.



V vseh navedenih sadovnjakih se bo uvajala tehnologija, ki jo podrobno vrednotimo v tem EIP projektu. Tako bomo preverili ustreznost tehnologije na več lokacijah in v več statističnih regijah. S sajenjem novih nasadov jablan v Sloveniji se v splošnem pomenu spodbuja razvoj sadjarstva.



Oblikovali smo idejno zasnovo za enovito trženje jabolk in izdelkov iz jabolk 'Bonita', kar bo pripomoglo k prepoznavnosti pri potrošnikih.
