Objectives

Design and development of a strategy based on NIRS sensors and AI for analytical digitalization in the olive oil industry.Design and development of a strategy based on NIRS sensors and AI for analytical digitalization in the olive oil industry. Optimization and instrumental comparison of the adaptation of different NIRS sensors for in situ use (portable and line) for authentication and characterization whole olive oil.

 

Objectives

Diseño y desarrollo de una estrategia basada en sensores NIRS e IA  para la digitalización analítica en la industria del aceite de oliva.Optimización y comparación instrumental de la adaptación de distintos sensores NIRS de uso in situ (portátiles y de línea) para la autentificación y caracterización integral del aceite de oliva.
 

Activities

Collection of olive oil samples from different commercial categories, design of a work protocol for data collection, sensory analysis of the selected olive oils, polyphenol content to highlight the antioxidant capacity, determination of the fatty acid profile and profile. of sterols, as an indicator of oil authenticity. Development of NIRS predictive models for the prediction of polyphenol content, fatty acid profile and sterol profile in olive oils. Use of advanced modeling tools for large databases, based on AI. Design and evaluation of a digital platform prototype that integrates the digital signal from NIRS sensors in the analysis of olive oil.

Activities

Recogida de muestras de aceite de oliva de distintas categorías comerciales, diseño de un protocolo de trabajo para la recogida de datos, análisis  de los aceites de oliva seleccionados sensorial, contenido en polifenoles para destacar la capacidad antioxidante, determinación del perfil de ácidos graso y perfil de esteroles, como indicador de autenticidad del aceite.
