Contexte

In relation to the world market for oak barriques, according to different reports, it is estimated that it will reach €1,050 M in 2026 with an annual growth of 5.3% from €770M in 2020(21). The main market is Europe, followed by the USA, and the market leader is Tonnellerie Francois Freres (TTF) with a market share of around 24%. The main operators in the market are: TFF, Oeneo, Nadalie, World Cooperage, Bouchared Cooperages, G & P Garbellotto S.p.A, Canton Cooperage, The Barrel Mill and Kelvin Cooperage. The development of this project will allow Spanish cooperages to access state-of-the-art technology with the application of AI to improve their production process, offering barrels with greater homogeneity, as well as the possibility of expanding the product portfolio from American oak barrels to barrels with known oxygenation potential, which will represent an important differentiation in the cooperage market. The positioning of Spanish cooperage groups in a groundbreaking technology could be the decisive step towards a qualitative leap compared to French and American groups in particular. This innovation will be passed on to the wineries, which in turn will be passed on to consumers, who will be able to access wines with specific profiles. In the field of distillates, the impact of the development of the project will be very important due to the importance of wood in most of the products produced. The sector will have the opportunity to develop new products with new profiles to offer minority and exclusive products.

Activities

1. Analysis of oxygen transfer rate in staves of different oak species (native and American) and study of the relationship with their grain size, 2. Anatomical analysis (grain size) from high definition RGB images, 3. Analysis of oxygen transfer rate in each stave and study of its relationship with grain size, 4. Development and validation of a stave classification algorithm according to its oxygen transfer rate (OTR), 5.Design and development of a prototype hardware for industrial classification of pre-staves based on its OTR, 6. Production of high, medium and low OTR of American oak barriques, 8. Production of wines from Tempranillo, Garnacha and Verdejo varietals and aging in high, medium and low OTR barrels, 9. To carry out a profitability study of the prototype of stave sorting and barrels with known or defined OTR, 10. To draw up a marketing and commercialization plan for the innovations

Activities

1. Análisis de tasa de transferencia de oxígeno en duelas de diferentes especies de roble (nacionales y americano) y estudio de la relación con su granulometría, 2. Análisis anatómico (granulometría) a partir de imágenes de alta definición RGB, 3. Análisis de tasa de transferencia de oxígeno en cada duela y estudio de su relación con la granulometría, 4. Confección y validación de un algoritmo de clasificación de duelas según su tasa de transferencia de oxígeno (OTR), 5.Diseño y desarrollo del hardware del prototipo de clasificación industrial de pre-duelas en base a su OTR, 6. Desarrollo de un software de clasificación de pre-duelas en base a su OTR utilizando los algoritmos validados, 7. Producción de barricas de alta, media y baja OTR de roble americano, 8. Elaboración de vinos de los varietales Tempranillo, Garnacha y Verdejo y crianza en barricas de alta, media y baja OTR, 9. Realizar estudio de rentabilidad del prototipo de clasificación de duelas y de las barricas con OTR conocido o definido, 10. Confeccionar un plan de marketing y comercialización de las innovaciones

The development of the project is justified by the need to digitalize/innovate the cooperage sector, which seeks to give objectivity to the selection process of wood for the manufacture of barriques for wines and distillates. This is a perfectly defined need with a great impact, not only in the cooperage sector, but also in the winemaking sector, which depends on the adequate supply of barrels to obtain quality wines/distillates with a specific profile. The oenological sector seeks a constant and homogeneous supply of barriques in terms of quality, which is quite difficult as wood is a natural product, with great structural variations even within the same trunk. The production of wines/distillates with the appropriate characteristics demanded by the consumer depends on this. The objective classification of oak staves for the manufacture of barriques using the latest technologies of image analysis, wood digitalization and machine learning, together with the transfer of knowledge to the cooperage sector, will respond to the aforementioned demand of winemakers, who now, with the technology and the expected results of this project, will be able to count on homogeneous barrels with a known oxygen transfer rate.

La aplicación de tecnologías no destructivas para la medición de las propiedades físicas que definen la tasa de transferencia de oxígeno (OTR) de la madera tendrá impacto en el sector empresarial y en su entorno socioeconómico. Generará nuevas oportunidades de negocio para el sector de la tonelería nacional a través de la creación de una nueva "forma de hacer las cosas", más tecnificada y con la aplicación de tecnologías de digitalización e inteligencia artificial para el control del proceso, generando un nuevo producto innovador en tonelería al que podrá acceder el sector enológico. De esta forma, las empresas toneleras o aserraderos nacionales podrán alcanzar el liderazgo tecnológico en el sector al poder ofrecer barricas con una tasa de oxigenación controlada y bajo demanda, personalizada. Cada enólogo podrá elegir, para cada tipo de vino/destilado, la tasa de oxigenación de la barrica, aspecto que definirá las características finales del vino o destilado.

The application of non-destructive technologies for measuring the physical properties that define the oxygen transfer rate (OTR) of wood will have an impact on the business sector and its socioeconomic environment. It will generate new business opportunities for the national cooperage sector through the creation of a new “way of doing things”, more technified and with the application of digitalization and artificial intelligence technologies for process control, generating a new innovative product in cooperage that will be accessible to the oenological sector. In this way, national cooperage companies or sawmills will be able to achieve technological leadership in the sector by being able to offer barrels with a controlled and customized oxygenation rate on demand. Each winemaker will be able to choose, for each type of wine/distillate, the oxygenation rate of the barrel, an aspect that will define the final characteristics of the wine or distillate.
