Applying the right fertilization plan to hops is a complex but essential process to maintain the high quality of the final product. In this regard, the study conducted in Emilia-Romagna allowed us to identify the fertilization plan that best enhances the alpha acid content (selenium and betaine). In fact, selenium and betaine have a boosting effect on the synthesis of certain aromatic metabolites present in the cone. Moreover, the synthesis of essential oil is also promoted by these nutrients. As for the aromatic profile, the issue is more complex, partly due to the complexity of the results. Many variables and elements were taken into consideration, but it is undeniable that, even in this case, the nutritional plan has a significant influence on the organoleptic quality of hops. Applicare il giusto piano di fertilizzazione sul luppolo è un processo complesso, ma indispensabile per poter mantenere alta la qualità del prodotto finito. A tal proposito lo studio condotto in Emilia-Romagna ci ha permesso di individuare il piano di fertilizzazione che più favorisce il contenuto in alfa acidi (selenio e betaina). Infatti selenio e betaine hanno un effetto di potenziamento della sintesi di alcuni metaboliti aromatici presenti nel cono. Inoltre, anche la sintesi di olio essenziale risulta favorito da questi elementi nutritivi. Per quanto riguarda il profilo aromatico, la questione è più complessa, anche solo per la complessità dei risultati. Sono tante le variabili e gli elementi presi in considerazione, ma è indubbio, che anche in questo caso il piano nutrizionale abbia un’influenza notevole sulla qualità organolettica del luppolo.
