“No to Food Waste” A clear message from the ToNoWaste winter school in Valencia

Coming together from different disciplines, countries and stages in career: The ToNoWaste transdisciplinary training in Valencia from 24th to 26th February, 2025 co-created and mobilized knowledge from a food system perspective and bridged the gap between science and practice. The training plan included experts' inputs on project results and moderated group works. The latter started with a common development of a food system map as diverse participants saw it. Throughout the three days we created references to this system, altered aspects of it and extended the perspective on the food system around the angle of developing solutions for food loss and waste prevention and reduction. The work encouraged the participants to start from their own background/expertise. Identify major problem fields in the Food System that lead to Food Loss and Waste as they perceive them and by exchanging these everyone extended their horizons.

An extended outdoor activity and guided photo workshop inspired participants and fostered a deeper understanding of "Food (waste) in the city" by capturing the participants views. Also, a workshop at a school canteen brought in some reality and a lot of good food to taste – young kids can learn about food and food waste and get in touch with practical aspects: ingredients and their uses, qualities and compositions – ultimately cooking and baking with hardly any food waste.

OEAW-ITA (Institute of Technology Assessment of the Austrian Academy of Sciences) developed and conceptualized the training together with STRATECO OG. It was hosted by VIC (Valencia Innovation Capital). UJI (Universitat Jaume I de Castellón), UD (Universidad de la iglesia de Deusto entidad religiosa), Caritas (Austria,) WUR (Wageningen University) provided expert inputs. The site visit was supported by CUINATUR (CUINATUR ACTIVA SL), and the photo walk through partners from CACV (Cooperativas Agroalimentarias de la Comunidad Valenciana) and MERC (Mercados Centrales Valencia S.A.).
