It is worth mentioning the identification of the structural reinforcement of the jars and the vitrification of their interior, which will allow them to be used for wine aging. Tests were carried out with the recovered jars and analytical tests, proving that there were no changes in the parameters analyzed: total acidity, pH, alcohol content, free SO2. Likewise, migration studies were carried out and the resin used to vitrify the jars did not transfer any components to the wine. It is also worth mentioning that a cubic jar without sweating has been achieved, opening up a great opportunity to gain capacity far beyond the current 135 liters.
Cabe destacar la identifcación de reforzar estructuralmente las tinajas y vitrificar su interior, permitiendo esto ponerlas en valor y recuperarlas para envejecer vinos. Se realizaron ensayos con las tinajas recuperadas y analíticas, comprobándose que no se producen cambios en los parámetros analizados, acidez total, pH, grado alcohólico, SO2 libre. Del mismo modo, se han llevado a cabo estudios de migración y la resina utilizada para vitrificar las tinajas no ha cedido componentes al vino. Mencionar también que se ha conseguido una tinaja cúbica sin sudado, abriendo una gran oportunidad para ganar capacidad muy por encima de los 135 litros actuales.
