Context

The project proposes, not only the cultivation of new plants but their use in a product that is in strong and rapid expansion and is able to absorb interesting quantities of plants. The beer sector is becoming strategic for the agricultural sector. There are still problems related to the supply of raw materials at local level but the sector is rapidly evolving with the birth of micro malt and with initiatives related to the development and support of the hop supply chain. Alongside traditional beers, botanical beers are being appreciated. This type is based on the use of plants or plant extracts to flavor beers and give the product uniqueness characteristics. In Italy these beers are spreading but they are linked to very few plants and often folkloristic. The goal of the project is: on the one hand to propose new recipes for flavoring beer but on the other to propose a method for making them (through progressive screening). The project includes interventions dedicated to the study of beer with the final aim of the project is to increase the demand for this product and to simultaneously drag the demand for raw materials. The expected results are: definition of a method for creating botanical beer and use of local herbs. The project deals with plants not commonly cultivated and therefore there is also an ecological value of the proposal.

Activities

Plant extracts will be introduced directly in bottle for panel tasting. To choose few plants and reduce the number for refining the choice with greater precision for the subsequent phases. It is expected to create micro productions of beers containing plants that have interesting characteristics. Production of an infuser to accurately dose the quantities of extracts within 500 l plants. The achievement of a homogeneous coloring of the waters will indicate an adequate functionality of the infuser.

Activities

Estratti di piante verranno introdotti in bottiglia per farla assaggiare a panel . Per scremare le prime piante e di ridurne il numero in modo da poter affinare la scelta con maggior precisione per le fasi successive.  Si prevede di realizzare delle micro produzioni di birre contenenti le piante che presentano caratteristiche interessanti.  Realizzazione di un infusore per dosare in maniera accurata le quantità di estratti all’interno di impianti da 500 l. Il raggiungimento di una colorazione omogenea dell’acqua dell’impianto sarà indice di una funzionalità adeguata dell’infusore.

2 Practice Abstracts

This project is an integration model of the supply chain between the agricultural world and the world of beer production; through the creation of a prototype infuser for plant extracts. The agricultural partners will have the task of producing (and / or spontaneous collection) the plant material which will be extracted and used to flavor the prototypes of new beers. The results of this project will mainly be linked to connecting the final consumer with the agricultural world through a product of great appeal such as beer. The project is divided into several sequential phases ranging from agricultural production, the preparation of plant extracts and the aromatization of beers. The work will be carried out on two levels. On the one hand on small quantities of material to exclude plants incompatible with the normal aromatization of beers, on the other hand in microbrewery to simulate the production process of these beers in real production methods. The evaluation of the products will be taken in place for subsequent exclusions of extracts that do not present interest from the consumer's point of view up to a single beer that will be produced in a medium-sized plant and tasted in different breweries (about 30) in the area to obtain an overall judgment of the product.

Il presente progetto presenta un modello di integrazione di filiera fra modo agricolo e mondo di produzione della birra; anche attraverso la realizzazione di un prototipo di infusore per estratti vegetali. I partner agricoli avranno il compito di produrre (e/o raccolta spontanea) il materiale vegetale che verrà estratto e utilizzato per aromatizzare dei prototipi di nuove birre. I risultati di questo progetto saranno principalmente legati a connettere il consumatore finale con il mondo agricolo attraverso un prodotto di grande appeal quale la birra. Il progetto si articola su più fasi essenzialmente sequenziali che vanno dalla produzione agricola, la preparazione di estratti vegetali e l’aromatizzazione delle birre. Il lavoro verrà svolto su due piani. Da una parte su piccole quantità di materiale per escludere piane che risultano incompatibili con le normali aromatizzazioni delle birre, dall’altra in microbirrificazioni per simulare il comportamento produttivo di queste birre in situazioni reali. La valutazione dei prodotti avverrà per successive esclusioni di estratti che non presentino interesse dal punto di vista del consumatore fino ad arrivare ad una sola birra che verrà prodotta in un impianto di media grandezza e fatta assaggiare presso differenti birrifici (circa 30) della zona per ottenere u giudizio globale del prodotto.

Il progetto ha proposto una destinazione verso un prodotto che è in forte e rapida espansione ed è potenzialmente in grado di assorbire interessanti quantitativi di estratti da piante: la birra ed in particolare le “botanical beer”. Questa tipologia si basa sull'impiego di piante o spesso di estratti di piante per aromatizzare le birre e conferire delle caratteristiche di unicità al prodotto. Da una parte si sono proposte nuove ricette per aromatizzare la birra e dall'altra un metodo per realizzarle (attraverso uno screening progressivo). I risultati
ottenuti sono: definizione di una metodologia di creazione di botanical beer e dall'altra utilizzare erbe del nostro territorio. Inoltre è stato progettato e realizzato un infusore per l'aromatizzazione delle birre con piante.
